1/4 cup soy sauce
1/4 cup black vinegar
1 teaspoon Chinese chili-garlic sauce
12 ounces ground pork
6 ounces raw medium shrimp—shelled, deveined and finely chopped
4 scallions, white and light green parts only, minced
3 tablespoon minced peeled fresh ginger
1 tablespoon soy sauce
1 tablespoon toasted sesame oil
1 1/2 tablespoons Shaoxing wine or dry sherry
3/4 teaspoon kosher salt
All-purpose flour, for dusting
1 package round dumpling wrappers, thawed if frozen
Napa cabbage leaves, for steaming
Blanched green peas, for garnish

TRADITIONAL JAPANESE RECIPE: In Shumai is a type of traditional Chinese dumpling, originating from Huhhot, but as it usually happened, Japan took it and remade it to match to its taste. Today Shumai in Japan are steamed pork fillings stuffed in Shumai wrappers. They have shrimp as the main ingredient and neither pork nor beef is used in the dough. Compared to the Chinese shaomai which is usually minced, the meat in Japanese shumai is ground to a paste. For this recipe we will not use Teriyaki sauce, although, you are free to add it. It's mouthwateringly delicious, but may take some practice.

Number Of Ingredients 14

1.5 cups Ground Pork
12-15 Green Peas
0.5 Brown Onion
12-15 Shumai (or Wonton) Wrappers
3 leaves of Lettuce
3 dried Shiitake Mushroom
3 tablespoons Cornstarch
1 tablespoon Sake
1 tablespoon Sesame Oil
0.5 tablespoon Soy Sauce
0.5 teaspoon Sugar
0.5 teaspoon Ginger Root
0.5 teaspoon Salt
Pinch of Pepper

Steps:

  • 01 - Chop the Brown Onion finely. 02 - Re-hydrate the dried Shiitake Mushrooms in water. Squeeze the water out, and chop finely. 03 - In a large bowl, combine Pork, chopped Onion, chopped Shiitake Mushrooms, Cornstarch and all the seasonings, and mix until well combined. 04 - Wrap the Meat Mixture with the Shumai wrappers and shape into little cylinders. 05 - Top with a Green Pea. Steaming: 06 - Lay the Lettuce or Nappa Cabbage leaves flat on the bottom of the steamer stray. 07 - Place Shumai on the lettuce, and cook in a steamer for 10-15 minutes at medium heat. 08 - Mix Soy Sauce and Vinegar and serve with Sauce and Mustard both on the side.
