2 tomatoes
1 red onion
2 Lettuce
500 grams shrimp (peeled and deveined)
2 handfuls Fresh herbs (such as, mint, cilantro leaves)
30 grams ginger
1 shallot
2 garlic cloves
4 tablespoons sesame oil
1 teaspoon Curry powder
1 teaspoon sweet ground paprika
0.5 teaspoon ground cilantro
0.5 teaspoon ground Cumin
salt
1 Lime (juiced)
4 Flatbread (wraps)
150 grams Yogurt (0.1% fat)

Steps:

  • Rinse the tomatoes, remove the stalks and cut into slices. Peel the onion and cut into thin strips. Rinse the lettuce, shake dry and cut into strips. Rinse the shrimp and pat dry. Rinse the herbs, shake dry and finely chop the leaves. Peel and very finely chop the ginger, shallot and garlic. Fry the vegetables in some oil in a wok for 3-4 minutes over medium heat until soft. Stir in the curry powder, paprika, coriander and cumin and fry briefly until the spices are fragrant. Mix in the shrimp and fry for 3-4 minutes until done. Season with salt and lime juice.
  • Heat the wraps in a dry pan for 1-2 minutes on each side. Cover with the shrimp, tomato slices, onion, lettuce and herbs. Drizzle some yogurt over the top and roll them up. Arrange on plates and serve halved if preferred.

6 Mission Whole Wheat+ Chia & Quinoa Tortilla Wraps, warmed
1 lb. Large shelled shrimp
2 tbsp. Vegetable oil, divided
2 tbsp. Cajun seasoning (for shrimp)
1 tsp. Cajun seasoning (for yogurt sauce)
1 Medium onion, thinly sliced
1 Green bell pepper, seeded and thinly sliced
1 Red bell pepper, seeded and thinly sliced
half tsp. Salt
1 cup Greek yogurt, low-fat plain
1 tsp. Paprika
1 tsp. Hot sauce
1 Garlic clove, minced or pressed
4 Large Romaine lettuce leaves

Steps:

  • Preheat oven to 450?. On a large baking sheet toss shrimp with 1 tablespoon oil and 2 tablespoons Cajun seasoning. Bake until cooked through, about 10 minutes.
  • Meanwhile, in a large skillet heat remaining 1 tablespoon oil over medium. Add onion, peppers, and salt and sauté until softened, 6-8 minutes.
  • In a medium bowl whisk together yogurt, remaining 1 teaspoon Cajun seasoning, paprika, hot sauce, and garlic.
  • Lay wraps flat. Place 1 lettuce leaf on each wrap and top with onions, peppers, shrimp, and yogurt sauce.
  • Fold in sides, then fold bottom of wrap over filling and roll up tightly. Cut in half and serve.
