1 tablespoon egg white
¼ teaspoon salt
8 ounces uncooked medium shrimp, peeled and deveined
¼ cup water
¼ cup white sugar
½ cup walnut halves
3 tablespoons mayonnaise
½ tablespoon honey
½ tablespoon sweetened condensed milk
1 teaspoon lemon juice
? cup cornstarch
vegetable oil for frying

Steps:

  • Mix egg white and salt together in a bowl; add shrimp and toss to coat evenly. Cover and let shrimp marinate in the refrigerator for 30 minutes.
  • Bring water to a boil in a small saucepan. Add sugar; cook until dissolved, about 1 minute. Add walnuts. Turn heat down to medium-low. Cook, stirring occasionally, until syrup thickens and turns into a dark caramel color, 4 to 7 minutes.
  • Line a baking sheet. Pour walnuts onto the baking sheet, spacing the pieces apart. Let cool.
  • Mix mayonnaise, honey, condensed milk, and lemon juice together in a small bowl for the dressing.
  • Drain excess liquid from the shrimp. Place cornstarch in a plastic sandwich bag. Toss shrimp in the cornstarch in batches.
  • Heat 2 to 3 inches of oil in a medium to large pot to 350 degrees F (175 degrees C). Drop shrimp carefully into the hot oil in batches; fry until golden brown, about 3 minutes per batch. Drain on paper towels to preserve crispiness.
  • Serve shrimp with the walnuts and honey dressing.

A very popular and easy snack - soft fried shrimp

200 g shrimp
1/3 cup + 3 tbsp. cornstarch
1 small egg ( ,around 50g)
pinch of salt
1/4 tsp. white pepper
oil for frying
salt and pepper for garnishing

Steps:

  • taste inside.
  • In a small bowl, crack a small egg (around 50g), then add the cornstarch in. Mix well and set aside for 10 minutes. It is very important to keep a ratio for the egg liquid and cornstarch. I have shown the texture in the picture, the batter should be slightly running but can form a thin lay on the shrimp. If you feel the batter is too thin, slightly add more cornstarch for adjusting. To prevent drying the batter, add only a small batch each time (recommend 1 teaspoon each time)
  • Place the shrimp in and mix well.
  • Heat around 1 and 1/2 cup of oil in a small pot until really hot, over 150 degree C. Then fry the shrimps by three batches until golden brown.

  • "A reader who requested the recipe for a sweet and pungent shrimp from the Panda Inn in Pasadena won the everlasting thanks of our tasting panel. Because its as impossible to eat just one of these as it is to eat a single kernel of popcorn, the recipe is often called Chinese popcorn. Peel and devein the shrimp. Slice in halves lengthwise. Rinse well and pat dry. Add the egg white to the shrimp and mix well. Mix 1-1/2tablespoons cornstarch with salt and add to shrimp. Stir to coat well. Add 1-1/2 tablespoons oil and mix well again. Place the shrimp in a bowl and refrigerate at least 2 hours.Remove the shrimp and dust with remaining cornstarch. Shrimp should be dry to the touch.
