0.25 red Cabbage (shredded)
0.25 white Cabbage (shredded)
1 small onion (very thinly sliced)
2 carrots (grated)
salt
2 tablespoons sugar
2 tablespoons hot water
2 tablespoons white wine vinegar
salt
peppers
3 tablespoons extra virgin olive oil
1 tablespoon fennel seeds

Steps:

  • Put the vegetables in a colander and sprinkle lightly with salt. Leave to stand for 1 hour.
  • Drain off the juice, pressing the vegetables to extract as much juice as possible. Discard the juice.
  • Put the vegetables in a bowl.
  • Dissolve the sugar in the hot water, add the vinegar and season with salt and pepper. Whisk in the oil and pour over the vegetables. Toss together and sprinkle over the fennel seeds.

5 cups green Cabbage (shredded)
2 cups red Cabbage (shredded)
2 cups Napa cabbage (shredded)
1 cup carrots (shredded)
6 scallions (chopped)
0.5 cup fresh cilantro (chopped)
salt (to taste)
freshly ground Black pepper (to taste)
6 tablespoons seasoned Rice wine vinegar
2 tablespoons toasted sesame oil (to taste)
3 tablespoons soy sauce
3 tablespoons brown sugar
2 tablespoons fresh ginger (minced)
1 tablespoon garlic (minced)
3 tablespoons Sesame seeds

Steps:

  • In a large bowl, toss cabbage, carrots, scallions, cilantro and salt together. Season with fresh pepper to taste.
  • In a separate bowl, whisk together vinegar, sesame oil, soy sauce, brown sugar, ginger, and garlic until thoroughly mixed and smooth Taste; add salt if necessary.
  • Pour dressing over shredded vegetables and gently toss to combine. Serve immediately or chill for several hours. Sprinkle with sesame seeds just prior to serving. Enjoy.

  • To make the dashi, bring 3 c. water to a boil in a small saucepan. Wipe off the kombu, add in to the boiling water, and let boil for 3 min. Add in the bonito flakes, remove from the heat, and let sit for 30 min. Strain, then add in the soy sauce, mirin, and lime juice; chill. Bring a large pot of salted water to a boil over high heat. Add in noodles, and cook till al dente, about 5 min. Drain in a colander, and rinse with cool water to stop cooking. Using a vegetable peeler, shave the carrot into long strips. Use a Japanese turning slicer to cut the daikon radish and the beet into beautiful curls, or possibly cut into a fine julienne with a chef's knife of mandolin. Divide the noodles among four bowls. Divide the cut carrot, radish, beet, Japanese cucumber, snow pea shoots, and napa cabbage leaves attractively among the bowls. Pour in the dashi top each bowl with a little grated ginger, and serve immediately. Makes 4 servings.

  • Saute/fry cabbage and onion in oil in a large skillet over medium low heat, stirring often, 10 min or possibly till cabbage begins to turn golden brown. Stir in carrots and garlic; saute/fry 5 min. Remove from heat. Cold to room temperature. Combine beef, egg, egg white, bread crumbs, basil, salt, oregano, pepper, water and vinegar in a large bowl. Fold in cooked vegetables and potato till well combined. Shape into 8" loaf. Place in shallow baking pan. Cover tightly with foil. Bake at 350 degrees for 30 min. Uncover. Bake 30 min longer.
