Shredded Potato Salmon Cakes Recipe | Allrecipes image

Delicious salmon cakes made with potatoes and the added color of red bell pepper and green onion. I came up with the idea for this recipe out of pure laziness. I didn't want to wait for potatoes to boil! It turned out great and definitely became the overall favorite. I enjoy a simple garlic mayonnaise to accompany the cakes but you can pretty much use whatever you desire.

Number Of Ingredients 12

3 medium potatoes, peeled and shredded
2 eggs
salt and pepper to taste
1 teaspoon Italian seasoning
½ pound cooked flaked salmon
3 green onions, chopped
2 tablespoons capers, drained
1 red bell pepper, seeded and chopped
¾ cup chopped canned banana peppers
¾ cup sliced fresh mushrooms
¾ cup dry bread crumbs
1 cup oil for frying, or as needed

Steps:

  • Squeeze as much liquid from the potatoes as you can, and place in a large bowl. Beat the eggs with salt, pepper, and Italian seasoning, and mix with the potatoes. Mix in salmon, green onions, capers, red bell pepper, banana peppers, mushrooms and bread crumbs. Form into about 12 patties about 3/4 inch thick.
  • Heat 1/4 inch of oil in a large heavy skillet over medium-high heat. Fry the patties for about 3 minutes per side, or until golden brown. Drain on paper towels quickly before serving. Try to fry all the patties at one time, otherwise the mixture becomes stiff.

  • 1. Make the umami stir fry powder (if desired): Toss all of the ingredients into a mini food processor or spice grinder. Blend to make a fine powder, scraping down the sides occasionally to make sure the dehydrated green onions are totally powderized. Carefully flip the fillet packets over with a fish spatula and cook for another 5 to 8 minutes on the other side. 11. Once the other potato layer is nicely browned and the center of the fish registers 135?F on an instant-read thermometer, transfer to a plate. 12. Repeat steps 6 to 11 with the remaining fish and potatoes and serve with lemon wedges.

The potato crust on the fish has a golden-brown crust that's nice and crunchy. Encrusting fish with shredded potatoes was different and we were pleasantly surprised at how much we liked it. We may like it more than traditional batter used on fried fish. The potatoes are perfectly seasoned and the fish is warm and flaky. For this recipe, we used cod but any white fish will work (haddock, grouper, tilapia, etc). We also drizzled just a bit of lemon juice on top... so good!
