- In a large bowl, toss onion with lime juice. Place pepitas in a large cast-iron skillet and cook on medium until golden brown, about 5 minutes, tossing occasionally; transfer to a bowl. Increase heat to medium-high and add oil. Season steak with chili powder, and 1/4 tsp each salt and pepper and cook to desired doneness, 2 to 3 minutes per side for medium-rare. Transfer to a cutting board and let rest at least 5 minutes before slicing. Meanwhile, add tomatoes and 1/4 tsp salt to the bowl with onion; toss to combine. Fold in avocado, cilantro, and pepitas. Serve with steak and sprinkle with cheese.

This allows the shirt to absorb the dye evenly. You do not have to dry the shirt before placing it in the dye pot. The stainless steel pot must be filled up with enough water to accommodate the shirt and allow the shirt to move around freely.
