1 1/2 lb lean (at least 80%) ground beef
1/2 cup chopped onion
1 bag (12 oz) frozen mixed vegetables
1/4 cup Muir Glen™ organic tomato paste (from 6-oz can)
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 1/2 cups Progresso™ beef flavored broth (from 32-oz carton)
2 tablespoons all-purpose flour
1 package (24 oz) refrigerated garlic mashed potatoes

Steps:

  • Heat oven to 375°F. Spray 2 1/2-quart round or oval baking dish with cooking spray.
  • In 12-inch nonstick skillet, cook beef and onion over medium-high heat 6 to 8 minutes, stirring occasionally, until thoroughly cooked; drain.
  • Reduce heat to medium. Add frozen mixed vegetables, tomato paste, Italian seasoning, salt and pepper. Cook 4 to 5 minutes, stirring frequently, until thoroughly heated.
  • Meanwhile, in small bowl, mix broth and flour with whisk until well blended. Add broth mixture to beef mixture. Cook 2 to 3 minutes, stirring occasionally, until thickened. Spoon beef mixture into baking dish.
  • Meanwhile, cook mashed potatoes as directed on package. Spread evenly over beef mixture.
  • Bake 20 to 25 minutes or until heated through.

3 tablespoons margarine or butter
3/4 cup milk
2 cups mashed potato flakes
4 slices precooked bacon, crumbled
1 (12-oz.) jar beef gravy
2 tablespoons chili sauce
2 cups frozen mixed vegetables
1/2 lb. cooked roast beef (from deli), cut into 1/4 to 1/2-inch pieces

Steps:

  • Heat oven to 350°F. Spray 9-inch glass pie pan with nonstick cooking spray. In medium saucepan, combine water and margarine. Bring to a boil. Remove from heat. Add milk. With fork, stir in potato flakes until moistened. Stir in bacon. Spread mixture evenly in bottom and up sides of sprayed pan.
  • In medium skillet, combine gravy, chili sauce and vegetables. Cook over medium heat until vegetables are crisp-tender, stirring occasionally. Stir in beef. Spoon evenly into potato crust.
  • Bake at 350°F. for 20 to 30 minutes or until thoroughly heated.
