Crust
5 cups all-purpose flour
1/4 cup sugar
1 teaspoon salt
2 cups cold Land O Lakes® Butter cut into chunks
18 to 20 tablespoons cold water, divided
Filling
2 cups fresh or frozen cranberries, thawed and drained, if using frozen
16 ounces (2 cups) fresh strawberries, hulled, sliced
6 ounces (1 1/2 cups) fresh blackberries
6 ounces (1 1/2 cups) fresh blueberries
6 ounces (1 cup) fresh raspberries
2 teaspoons freshly grated orange zest
1 cup sugar
1/2 cup cornstarch
Topping
1 large Land O Lakes® Egg beaten
Sanding sugar
Vanilla ice cream, if desired

Steps:

  • Heat oven to 400°F.
  • Combine 2 1/2 cups flour, 2 tablespoons sugar and 1/2 teaspoon salt in large bowl. Cut in 1 cup butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in 9 tablespoons or enough water with fork just until flour is moistened.
  • Roll out dough on lightly floured surface into 19x14-inch rectangle. Place onto bottom of ungreased 15x10x1-inch baking pan, pressing firmly against bottom and sides. Refrigerate.
  • Place fruit and orange zest in medium bowl. Stir together sugar and cornstarch in small bowl. Add sugar mixture to berries; toss to coat. Set aside.
  • Combine remaining 2 1/2 cups flour, 2 tablespoons sugar and 1/2 teaspoon salt in large bowl. Cut in 1 cup butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in 9 tablespoons or enough water with fork just until flour is moistened. Roll dough into 17x12-inch rectangle. Cut rectangle into 12 (1 1/2-inch-thick) diagonal strips with sharp knife or pastry wheel.
  • Pour filling into refrigerated crust. Place 6 strips diagonally across filling in pie pan, 1 inch apart (use every other strip for the right length). Place remaining 6 strips at right angles, 1 inch apart, to strips already in place to create lattice. Trim strips.
  • Fold trimmed edge of bottom crust over strips, building up an edge. Seal, crimp or flute edge. Brush strips with beaten egg; sprinkle with sugar. Bake 38-42 minutes or until crust is browned and filling is bubbly. Let cool slightly before serving.
  • Serve with vanilla ice cream, if desired.

6 cups all-purpose flour
1-1/2 teaspoons salt
1-1/2 teaspoons baking powder
1-1/2 cups shortening
6 large egg yolks
3/4 cup plus 4-1/2 teaspoons water
3 tablespoons lemon juice
8 cups sliced peeled tart apples
1-1/2 cups sugar
1 cup crushed cornflakes
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 large egg white, lightly beaten

Steps:

  • In a large bowl, combine the flour, salt and baking powder. Cut in shortening until mixture resembles coarse crumbs. Whisk the egg yolks, water and lemon juice; gradually add to flour mixture, tossing with a fork until dough forms a ball. Cover and refrigerate for 30 minutes. , Divide dough in half so that one portion is slightly larger than the other. On a lightly floured surface, roll out larger portion to fit the bottom and sides of a greased 15x10x1-in. baking pan. Arrange apples over crust. Combine the sugar, cornflakes, cinnamon and nutmeg; sprinkle over apples., Roll out remaining dough to fit top of pie; place over apples. Seal edges; cut slits in top. Brush with egg white. Bake at 400° for 15 minutes. Reduce heat to 350°; bake 20-25 minutes longer or until golden brown.

  • Place flour and butter into freezer for 30 minutes before starting crust process. In a large food processor, pulse flour, sugar, and salt until combined. Add butter and pulse until pea-sized and some slightly larger pieces form.  With the machine running, add vinegar, then ice water into feed tube, 1 tablespoon at a time, until dough starts to come together and is moist but not wet and sticky (test by squeezing some with your fingers). Mixture will be crumbly. Turn dough onto a lightly floured surface. Remove 1/4 of the dough and flatten into a disk (making sure there are no/minimal cracks), and reshape remaining 3/4 dough into another disk. Cover each disk with plastic wrap and refrigerate until dough is very cold, at least 2 hours or up to overnight.  Preheat oven to 425º and grease a 12"-x-17" baking sheet with cooking spray. Roll out larger portion of pie dough into a large rectangle, slightly larger than the prepared baking sheet. Roll up dough on your rolling pin and drape over sheet pan. When pie comes out of the oven, add decorative crust and let cool completely. Slice into squares and serve with a dollop of whipped cream and a sprinkle of cinnamon.
