Cute and creative Lamb Butt Cookies are a perfect Easter treat!

Number Of Ingredients 6

1 roll (16.5 oz) refrigerated Pillsbury™ Sugar Cookie Dough
1/3 cup all-purpose flour
1 container (12 oz) fluffy white whipped ready-to-spread frosting
32 black jelly beans, cut in half lengthwise
8 large marshmallows
3 cups miniature marshmallows, cut in half crosswise (224 miniature marshmallows)

Steps:

  • Heat oven to 350°F. In large bowl, mix cookie dough and flour with hands until well mixed. (DO NOT EAT RAW COOKIE DOUGH AFTER COMBINING WITH FLOUR.) Reshape dough into 9x1 1/2-inch log. Wrap in plastic wrap; refrigerate 30 minutes.
  • Remove plastic wrap. Cut dough into 32 slices. Place slices on ungreased cookie sheet.
  • Bake 8 to 12 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.
  • To make lamb butt, frost 1 cookie with frosting. Attach 2 jelly bean halves, cut sides down, to bottom of cookie for feet.
  • Cut each large marshmallow in half widthwise, then in half crosswise, into 4 pieces.
  • Attach 1 large marshmallow piece, rounded side up, to center of cookie for tail. Attach about 14 miniature marshmallow halves, cut sides down, to frosting on cookie. Repeat with remaining cookies.

1 (5-lb.) boneless leg of lamb
2 lemons, halved and divided
¼ cup chopped fresh oregano
2?½ teaspoons salt
2 teaspoons pepper
Kitchen string
1 garlic bulb, unpeeled
¼ cup olive oil
1 cup low-sodium chicken broth
Garnishes: roasted garlic cloves, baby carrots, radishes, lettuce leaves

Steps:

  • Preheat oven to 350°. Unroll lamb, if necessary. Rub 1 lemon half on all sides of lamb, squeezing juice from lemon. Stir together oregano, salt, and pepper; rub on lamb. Roll up lamb, and tie with kitchen string.
  • Place lamb on a lightly greased rack in a roasting pan. Separate garlic cloves (do not peel), and place around roast. Drizzle olive oil over lamb and garlic cloves.
  • Squeeze juice from remaining 1 1/2 lemons into a bowl. Stir together juice and chicken broth; pour into roasting pan.
  • Bake at 350° for 2 hours to 2 hours and 15 minutes or until a meat thermometer inserted into thickest portion registers 140° (medium) or to desired degree of doneness. Remove lamb from pan; cover with aluminum foil, and let stand 10 minutes before slicing. Garnish, if desired.

  • Roasted Boston Butt: Substitute 1 (5-lb.) bone-in pork shoulder roast (Boston butt) for lamb. Rub lemon and oregano mixture over roast as directed. (Do not tie up roast.) Proceed as directed, increasing bake time to 3 to 3 1/2 hours or until fork-tender. Shred pork into large pieces using two forks, if desired. Hands-on time: 20 min. Total time: 3 hr., 30 min.
