Garlic Lover's Roast Beef - Delicious Healthy Recipes Made ... image

Garlic Lovers Roast Beef is my family's favorite roast beef recipe, so flavorful and loaded with garlic as the name implies.

Number Of Ingredients 7

2-3 lb roast or eye round (all fat trimmed off)
3-4 cloves garlic (cut into thin slivers)
olive oil spray
kosher salt (to taste)
fresh cracked pepper (to taste)
2 tsp dried chopped rosemary
meat thermometer

Steps:

  • Remove the roast from refrigerator 1 hour before cooking to reach room temperature. Trim all the fat off the meat. Using a sharp knife, pierce meat about 1/2-inch deep and insert slivers of garlic in each hole, pushing all the way in. Lightly spray the meat with olive oil and season generously with salt, pepper and rosemary. Place the thermometer all the way into the center of the meat.
  • Preheat oven to 350F. When the oven reaches 350F, place the roast in a roasting pan and put in the oven.
  • Roast until the thermometer reads 130° for rare, 140° for medium rare, 150° for medium, and 155-160° for well done. Remove the roast from the oven and let it rest 10-20 minutes before you cut it so that the juices distributed evenly. I personally remove my roast beef from the oven when it is 135° for medium rare. The temperature will rise an additional 5 degrees as it sits.
  • Slice thin and serve.

1/4 cup mayonnaise
1/4 cup spicy mustard 
3 to 4 tablespoons poppy seeds 
3 tablespoons grated onion 
1 tablespoon horseradish mayonnaise
Dash of Worcestershire 
12 soft hamburger buns, sliced in half
1 pound thinly shaved roast beef 
8 ounces sliced provolone 
8 ounces American cheese 

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix together the mayo, mustard, poppy seeds, grated onion, horseradish mayo and Worcestershire. Taste the dressing and adjust the ingredients however you wish.
  • To assemble, spread the dressing on the top and bottom buns. On the bottom bun, lay on some provolone, roast beef and American cheese, and place the top bun on top. Repeat with the next sandwich.
  • Wrap each sandwich in a foil square, and either bake right away or keep in the fridge. To bake right away, put them on a baking sheet in the oven until the buns are slightly crusty and the cheese is melted, 15 to 20 minutes. Great for a crowd!

Taste it and adjust ingredients however you wish.To assemble, spread dressing on top and bottom buns. Lay on roast beef or ham, then one or two slices of cheese (I cut them to fit the small buns.) If you're using Cheez Whiz, spread a layer on the top bun. Wrap each sandwich in a foil square, and either keep in the fridge or bake right away. To bake the sandwiches, put them on a baking sheet in a 350 degree oven for 15 to 20 minutes. The buns should be slightly crusty and the cheese should be melted. Great for a crowd!
