1 pound string beans
3 to 4 tablespoons sesame paste (tahini)
1 clove garlic, minced
2 tablespoons sesame oil
2 tablespoons peanut or safflower oil
3 tablespoons toasted sesame seeds
Course salt and freshly ground pepper to taste

Steps:

  • Trim the string beans and cut them on the bias into two-inch pieces. Steam them until tender.
  • Meanwhile, combine remaining ingredients in a bowl. Add the beans and toss thoroughly. If necessary, add more sesame paste or oil. Serve hot or cold.

I discovered this dish at my Japanese mother-in-law's house during a family holiday buffet. She had many friends who brought wonderful Japanese dishes, and this was and has remained one of my favorites. It's light and fresh any time of the year.

Number Of Ingredients 5

1 tablespoon canola oil
1?½ teaspoons sesame oil
1 pound fresh green beans, washed
1 tablespoon soy sauce
1 tablespoon toasted sesame seeds

Steps:

  • Warm a large skillet or wok over medium heat. When the skillet is hot, pour in canola and sesame oils, then place whole green beans into the skillet. Stir the beans to coat with oil. Cook until the beans are bright green and slightly browned in spots, about 10 minutes. Remove from heat, and stir in soy sauce; cover, and let sit about 5 minutes. Transfer to a serving platter, and sprinkle with toasted sesame seeds.
