4.5 cups all-purpose flour
0.75 ounce Yeast (OR 7 g dried yeast)
0.5 teaspoon sugar
1 cup lukewarm milk
0.25 cup softened butter
1 egg
1 teaspoon salt
2 tablespoons milk
0.333 cup Sesame seeds

Steps:

  • Sieve the flour into a bowl and make a well in the centre. Dissolve the yeast with the sugar in a little of the lukewarm milk (crumble fresh yeast if using). Pour the mixture into the well and mix with a little of the flour to form a yeast starter. Cover and leave in a warm place for around 30 minutes to start working.
  • Add the rest of the milk, the butter, the egg and the salt and knead to form a smooth dough. Cover and leave for 1 hour to rise.
  • Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.
  • Knead the dough thoroughly once more and divide into approximately 15 portions. Shape into small, round rolls and place on the tray. Cover and leave to rise again for 30 minutes.
  • Brush with the milk and sprinkle over the sesame seeds. Bake in the oven for approx. 20 minutes until golden. Cool on a wire rack.

1 16 ounce loaf frozen white or wheat bread dough
¼ cup sesame seeds
2 tablespoons yellow cornmeal
2 tablespoons grated or finely shredded Parmesan cheese
1 teaspoon lemon-pepper seasoning
3 tablespoons butter, melted

Steps:

  • Thaw dough according to package directions. Grease a 9x9x2-inch square baking pan; set aside. In a shallow dish or small bowl combine sesame seeds, cornmeal, Parmesan cheese, and lemon-pepper seasoning. Place butter in a second dish. Cut the bread dough into 16 equal pieces. Shape each piece into a ball by pulling and pinching dough underneath. Roll dough pieces in butter, then in the seasoning mixture to lightly coat. Arrange dough pieces, smooth sides up, in prepared pan.
  • Cover pan with waxed paper and let rise in a warm place until nearly double in size (45 to 60 minutes). After 35 minutes, preheat oven to 375°F.
  • Bake, uncovered, about 25 minutes or until golden brown. Remove rolls from pan to a wire rack. Cool slightly before serving.
