4 1/2 cups sugar
1 (14 ounce) can evaporated milk
1 cup butter, softened
1 (7 ounce) jar marshmallow cream
3 (12 ounce) bags semi-sweet chocolate chips
2 teaspoons vanilla
2 cups coarsely chopped nuts

Steps:

  • In a large saucepan, mix sugar with evaporated milk.
  • Stir well to dissolve sugar.
  • Bring to a rolling boil for 7 to 8 minutes.
  • In a large bowl, cream butter and marshmallow cream until fluffy.
  • Stir in chocolate chips.
  • Pour hot mixture over chocolate mixture.
  • When chocolate is melted, add vanilla and nuts.
  • Blend well.
  • Pour into a buttered 9 x 13 pan.
  • Chill.
  • Cut into squares before becoming firm.
  • Caution: This makes a LOT of fudge!

This is the original See's fudge recipe I found when I did a Google search HISTORICAL NOTE: Given to Amy DeVore by Emma Julian c. 1930, this is “supposedly” the original recipe for See's Fudge, produced by the See's Candy Company, Los Angeles. Emma allegedly worked for See's and later owned her own candy store.

4 1/2 cups sugar
3 (12 ounce) packages chocolate chips
1/2 lb margarine
1 teaspoon vanilla
1 (12 ounce) can evaporated milk
7 ounces marshmallow cream
2 cups nuts

Steps:

  • Mix 4 1/2 cups sugar with one (1) can evaporated milk.
  • Boil 7 to 8 minutes, stirring often (rolling boil).
  • Mix together in a large bowl; 3 packages chocolate chips, 7 oz. jar marshmallow cream, 1/2 lb. melted margarine.
  • Cream margarine and marshmallow together and add chocolate chips.
  • Pour hot mixture over chocolate mixture.
  • After chocolate has melted, add 2 cups of nuts and 1 teaspoons of vanilla, blend well, pour into buttered pans and chill in refrigerator.
  • Cut into squares before firm.
  • This recipe makes about 5 lbs of fudge.

The first See's Candy shop was opened in Los Angeles in 1921 by Charles A. See. He used his mother's candy recipes, and a picture of her at the age of seventy-one embellished every black-and-white box of chocolates. Mary See died in 1939 at the age of eighty-five, but her picture went on to become a symbol of quality and continuity. See's manufacturing plants are still located in California, but because the company will ship anywhere in the United States, See's has become a known and respected old-fashioned-style chocolatier all across the country. In an age of automation, many companies that manufacture chocolate have resorted to automated enrobing machines to coat their chocolates. But See's workers still hand-dip much of their candy.  One of the company's most popular sweets isn't dipped at all. It's a hard, rectangular lollipop that comes in chocolate, peanut butter and butterscotch flavors. The latter, which tastes like caramel, is the most popular flavor of the three, and this recipe will enable you to clone the original, invented more than fifty years ago.
