When you're looking for a fast, flavorful meal, look no further than fish! Parmesan cheese and special seasonings add a bit of an Italian flair to these fillets. Not only is this recipe low in fat, it's delicious as well. So it's sure to please everyone in the family.

Number Of Ingredients 6

1-1/2 pounds cod or haddock, cut into 3/4-inch pieces
2 tablespoons butter
1/2 cup crushed wheat crackers or seasoned dry bread crumbs
2 tablespoons grated Parmesan cheese
1 tablespoon dried parsley flakes
1/2 teaspoon Italian seasoning

Steps:

  • Place fish in a greased 13-in. x 9-in. baking dish. Brush with butter. In a small bowl, combine the remaining ingredients; sprinkle over fish. , Bake, uncovered, at 425° for 10-15 minutes or until the fish flakes easily with a fork.

Yum! Deliciously crunchy fish without all the fat. My kids love when I make my fish this way. So easy too...always a plus! I've used this coating on many different kinds of fish. It's great on all... Enjoy!

Number Of Ingredients 9

2 pound(s) cod fillets , or whatever fish you want to use - for thicker fish, increase baking time
1/2 cup(s) shredded parmesan - not the powdered kind
1 tablespoon(s) dried, minced onions
1/2 cup(s) corn meal - i use yellow
1/2 teaspoon(s) pepper
1/2 teaspoon(s) garlic salt
1 teaspoon(s) ground, paprika
1/2 teaspoon(s) salt
1/3 cup(s) milk

Steps:

  • Preheat oven to 400 degree F. Line a shallow baking pan with foil. Spray with non stick cooking spray or wipe with oil, as so fish won't stick. In a shallow dish, add seasonings, corn meal, cheese and stir to combine.
  • Dip each piece of fish into the milk, let excess drip off. Press each side into the crumbs ( making sure well coated.)
  • Place on sheet pan. Bake for 25 - 30 minutes or until nice and golden and fish is flaky. If using bigger pieces of fish, you may need to increase breading ingredients and baking time.
  • Serve with lemon and tarter sauce. Enjoy!

  • "1. Rinse and pat dry fish. 2. Mix together flour and seasonings together in a pie plate. I am guessing a little on the amount, so season to taste. 3. Pre-heat large fry pan over medium heat. I like either cast iron or stainless pans for this. 4. Add oil to pan, enough so that there is about a 1/2 inch or so in the bottom. 5. Bread fish by turning in the flour a couple times. You could shake the fish with the flour mixture in a bag as well. 6. Add fish to hot oil, until pan is full but not crowded. Make sure there is about 1/2 inch of space between the pieces of fish. 7. Fry until browned. You'll know because the edges of the fish will start to brown and the fish will easily come free off the bottom of the pan. If the fish doesn't want to come free yet, let it cook a little longer. I use tongs and wiggle the piece a little bit before I try to turn the filet. Turn when ready, it should only take a few minutes, but will depend on the size of the filets. 8. Remove from pan when lightly browned, you don't want to over-cook and dry the fish out. Place the fish on a cooling rack lined with paper towels. Don't put on a plate or your fish will get soggy. You can place this in a warm oven to keep the fish warm while you cook the next batch. Great served with tarter sauce!"
