Number Of Ingredients 7

8 ounces sharp Cheddar, finely grated
1 cup all-purpose flour 
4 tablespoons (1/2 stick) butter, cut into pieces 
1/2 teaspoon kosher salt 
1/2 teaspoon seasoned salt 
Pinch of cayenne 
3 tablespoons ice water 

Steps:

  • Put the Cheddar, flour, butter, salt, seasoned salt and cayenne in a food processor and pulse until the mixture resembles sand. Add the ice water and pulse until the dough comes together. Form the dough into a ball, wrap in plastic and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat.
  • Roll out the dough to 1/4-inch thickness and cut into squares with a pizza cutter. Use a wooden skewer to poke a small hole in the center of each square. Transfer to the prepared baking sheet and bake until golden brown, 15 to 17 minutes. Allow to cool before packing up.

Number Of Ingredients 10

1 1/2 cups all-purpose flour
1/2 cup whole-wheat flour 
3 tablespoons salted butter, room temperature 
1 teaspoon salt, plus additional for top 
3 tablespoons grated onion 
3 tablespoons chopped mixed herbs, such as thyme and chives
3 tablespoons chopped mixed herbs, such as thyme and chives 
1/2 cup whole milk 
1 egg white, whisked 
1 tablespoon seeds, such as sesame or poppy

Steps:

  • Preheat the oven to 450 degrees F.
  • Combine the all-purpose flour, whole-wheat flour, butter and salt in a stand mixer fitted with the paddle attachment. Mix on medium-low speed until the mixture resembles a coarse meal. Add the onion, herbs and milk; mix until just combined--do not overwork the dough.
  • Roll out the dough into a 1/8-inch-thick rectangle on lightly floured parchment paper. Brush the top with egg white and sprinkle with the seeds and some salt.
  • Transfer the dough and parchment to a baking sheet and cut into 2-by-3-inch rectangles.
  • Bake until golden, 10 to 12 minutes.
