LONGEVITY PASTA WITH BREADCRUMBS, CAPERS, SARDINES + LEMON ...

Longevity Pasta with Breadcrumbs, Capers, Sardines + Lemon ... image

Renowned Dr. Will Li combines anti-aging ingredients, including sardines, capers, parsley and lemon, into a healthy + flavor-packed pasta.

Provided by Dr. Will Li

Number Of Ingredients 19

Four 1-inch-thick slices Italian bread
1 tin boneless
skinless sardine filets packed in olive oil
2 cloves garlic
finely chopped
3 tablespoons EVOO
1 medium sweet onion
coarsely chopped
3 tablespoons salt-packed capers
rinsed
¼ cup chopped fresh Italian parsley
1 teaspoon lemon zest (Dr. Li recommends organic since we're using the skin)
¼ teaspoon crushed red pepper flakes
½ lemon
for juice
6 ounces whole wheat spaghetti
Salt and freshly cracked black pepper
2 lemon wedges
2 sprigs fresh Italian parsley

Steps:

  • Bring a large pot of water to a boil
  • Meanwhile, place the bread in a food processor (or blender) and pulse until uniform coarse breadcrumbs result, about 1 minute
  • Set aside
  • Pour the olive oil from the tin of sardines into a large pan and heat over medium heat
  • Add the garlic and sauté for 1 minute
  • Add the breadcrumbs and stir continuously until golden brown and crunchy, about 4 minutes
  • Remove from the heat to prevent burning, transfer the toasted breadcrumbs to a plate and set aside
  • Clean the pan
  • Heat the EVOO in the same pan over medium-high heat, add the onions and sauté until just caramelized, about 5 minutes
  • Add the sardines, breaking them into pieces with a fork, and mix evenly with the onions
  • Stir in the capers, parsley, lemon zest and red pepper flakes
  • Squeeze in the juice from the lemon
  • Mix the sauce gently and turn off the heat
  • Cook the spaghetti in the boiling water until just al dente, about 7 minutes
  • Drain and reserve ½ cup of the pasta water
  • Add the spaghetti to the sauce, season to taste with salt and pepper and mix until evenly combined
  • Turn the heat to medium, add the pasta water and cook, stirring, until the liquid is absorbed, about 1 minute
  • Sprinkle the pasta with the toasted breadcrumbs, reserving some for serving, then mix again
  • Serve immediately, topping each portion with another pinch of breadcrumbs
  • Garnish with a lemon wedge and sprig of parsley

VINEGAR CHICKEN WITH CRUSHED OLIVE DRESSING RECIPE - NYT ...

Vinegar Chicken With Crushed Olive Dressing Recipe - NYT ... image

This tangy, turmeric-stained, sheet-pan chicken makes the most of the schmaltzy bits left behind on the pan, which is deglazed with fresh garlic, briny olives and a bit of water. Think pan sauce, but done on a sheet pan.

Provided by Alison Roman

Total Time 40 minutes

Yield 6 servings

Number Of Ingredients 8

3 1/2 pounds bone-in, skin-on chicken parts
1 teaspoon ground turmeric
6 tablespoons olive oil
Kosher salt and black pepper
1/2 cup white wine vinegar
1 1/2 cups green Castelvetrano olives, crushed and pitted
2 garlic cloves, finely grated
1 cup parsley, tender leaves and stems, chopped

Steps:

  • Heat oven to 450 degrees. Place chicken on a rimmed baking sheet and toss with turmeric and 2 tablespoons olive oil, and season with salt and pepper. Make sure chicken is skin-side up, then pour vinegar over and around chicken and place in the oven.
  • Bake chicken, without flipping, until cooked through and deeply browned all over, 25 to 30 minutes.
  • Meanwhile, combine olives, garlic, parsley, the remaining 4 tablespoons olive oil and 2 tablespoons water in a small bowl; season with salt and pepper.
  • Once chicken is cooked, remove baking sheet from the oven and transfer chicken to a large serving platter, leaving behind any of the juices and bits stuck to the pan.
  • Make sure the baking sheet is on a sturdy surface (the stovetop, a counter), then pour the olive mixture onto the sheet. Using a spatula or wooden spoon, gently scrape up all the bits the chicken left behind, letting the olive mixture mingle with the rendered fat and get increasingly saucy. Pour olive mixture over the chicken, then serve.

COBB SALAD RECIPE - NYT COOKING
While the origins of a Cobb salad are still up for debate, what goes into one is fairly absolute: tender chicken breast, tangy tomatoes, perfectly hard-boiled egg and, perhaps most important, crispy bacon. This classic version relies on crumbled blue cheese and ripe avocado for creaminess, rather than a cheese or buttermilk-based dressing, making way for a mustardy shallot vinaigrette. The way each of the ingredients is prepared will depend on personal preference: Are you a chunky, chopped salad kind of person? Or do you prefer your lettuce torn and tomatoes sliced? Here, the torn and sliced approach is taken for a more elegant visual, but feel free to make it your own. It also halves nicely if you're cooking for two.

  • Arrange the chicken in the center of the bowl or platter in a straight line. Place the tomatoes on one side and the eggs on the other. Place the avocado next to the eggs, and the blue cheese next to the tomatoes. Sprinkle bacon in the center of the bowl. Spoon remaining dressing over the top and sprinkle with chives.
