Shrimp and vermicelli in clay pot recipe - Simple Chinese Food image

Shrimp vermicelli pot is a home-cooked dish. The main ingredients are fresh shrimp and vermicelli. I used Jiwei shrimp. The fans chose the better cooked Longkou vermicelli. Its method is also very simple, it can be said that from the selection of ingredients to the specific operation, it does not require too advanced cooking skills.

14 Kewei Shrimp
100 g Rice noodles
3 petals garlic
1/4 teaspoon Chicken Essence
2 tablespoons Salad oil
3 slices ginger
a little pepper
2 tablespoons Erguotou or cooking wine
1 tablespoon Soy sauce
1 tsp Sugar
1/8 teaspoon salt
1 tablespoon Oyster sauce

Steps:

  • Soak the vermicelli in cold water to soften and drain. Shred ginger, cut garlic into small slices or mince
  • Jiwei shrimp trimming must remove the intestinal mud, clean and drain the water
  • Put the Jiwei shrimp into a large bowl, add 1 tablespoon Erguotou, a little salt, and marinate for 10 minutes
  • Cold pan, cold oil, add the marinated Jiwei shrimp, stir fry to change color, and set aside
  • Leave the bottom oil in the wok, add shredded ginger, garlic slices, and oyster sauce, and stir until fragrant
  • Add appropriate amount of water, light soy sauce, salt, sugar, Erguotou, pepper, and boil on high heat
  • Add vermicelli, stir-fried prawns, simmer for a while

6 clove(s) garlic
2 tablespoon(s) cilantro stems
1 teaspoon(s) salt
1 tablespoon(s) oil
16 shrimp peeled and deveined
GLASS NOODLES
8 ounce(s) glass noodles soaked in hot water for 20 minutes
SAUCE
2 cup(s) chicken stock
1 tablespoon(s) oyster sauce
1 tablespoon(s) soy sauce
1 tablespoon(s) dark soy sauce
1 tablespoon(s) whiskey
1 teaspoon(s) sesame oil
1 teaspoon(s) grated ginger
1/4 cup(s) brown sugar
VEGGIES
3 scallions chopped
8 ounce(s) asparagus tips about 2 inches in length
2 tablespoon(s) vegetable oil
cilantro for garnish

Steps:

  • For the shrimp Place the garlic, cilantro stems, and salt in a motar and pestal and pound these into a paste. Add the 1 tbsp of oil. Rub all over the outside of the shrimps. Set aside.
  • For the sauce. Mix the stock, oyster sauce, soy sauce, dark soy sauce, whiskey, sesame oil, ginger, and brown sugar. Set aside.
  • Preheat a 2 qt clay pot and add 2 tbsp. veg oil. Brown the shrimps on both sides working in batches. Remove to a plate and set aside.
  • Turn the heat up to high add the sauce and scallions. Bring to a boil. Drain the noodles and add them to the pot. Scatter the asparagus over the top and cover the pot and reduce heat to medium. Let cook 5 minutes. Add the shrimp on top and cook another 5 minutes.
  • Serve topped with fresh cilantro
