1 (10 ounce) package prepared pizza crust
1/3 cup Italian-style tomato paste
1 tablespoon water
1/4 teaspoon dried Italian seasoning
1 (8 ounce) package frozen cooked baby shrimp, thawed and drained
butter-flavored cooking spray
1 tablespoon grated parmesan cheese

Steps:

  • roll pizza crust into 18 x 10 inch rectangle.
  • cut into 6 (6x5 inch) retangles.
  • Combine tomato paste, water,and Italian seasoning.
  • Spread evenly over retangles, leaving a 1/2 inch border.
  • Arrange shrimp evenly over half of eaach rectangle.
  • Brush edges of rectangles with water.
  • Fold rectangles in half crosswise over shrimp, press edges together with a fork.
  • Place calzones on a large baking sheet coated with cooking spray.
  • Coat tops with cooking spray, and sprinkle evenly with parmesan cheese.
  • Bake at 400 degrees for 18 minutes or until lightly browned.

Fontina cheese works well in this calzone, but you can also use Swiss, Monterey Jack, or mozzarella. Serve this with a side of broccoli or a tossed green salad.

Yield 6 servings (serving size: 1 calzone)

Number Of Ingredients 9

1 pound medium cooked shrimp, peeled and deveined
1 cup (4 ounces) shredded fontina cheese
1 ounce diced prosciutto or ham
2 tablespoons thinly sliced fresh basil
1 tablespoon minced fresh chives
All-purpose Pizza Dough
1 large egg
1 tablespoon water
1 tablespoon yellow cornmeal

Steps:

  • Preheat oven to 450°.
  • Combine the first 5 ingredients in a bowl.
  • Divide the prepared dough evenly into 6 equal portions on a lightly floured surface; shape each piece into a ball. Roll each ball into a 6-inch circle. Combine egg and water with a whisk in a small bowl. Brush edge of each circle with egg mixture; reserve remaining egg mixture.
  • Place 1/6 of shrimp mixture on half of each circle. Fold the dough over shrimp mixture until edges almost meet. Bring the bottom edge over top edge; crimp edges of the dough with fingers to form a rim. Place calzones on a baking sheet sprinkled with cornmeal. Brush tops with the reserved egg mixture. Bake calzones at 450° for 12 minutes or until golden brown.

And to make things even easier ... take advantage of shrimp you can buy steamed fresh right at the seafood counter; or even frozen shrimp will work, but not quite as well. Store bought pesto, marinara sauce, and pizza dough and you have dinner in 30 minutes. Now, please make your own crust, pesto, and steam your own shrimp if time allows, but this is just one of those quick dinners I like to have on hand when you need it - or just to tired to cook, but it is so much better and cheaper than take out. You can even use one of those "bagged" lettuce to make a great quick side salad and add your favorite toppings. And remember ... these are my favorite ingredients, but please feel free to add olives, peppers, mushrooms, or other cheeses - use your imagination!

  • Preheat oven to 500° and grease two large baking sheets with cooking spray. Divide pizza dough into 4 pieces. On a lightly floured surface, roll one piece of dough out into an 8" circle, about ¼" thick. Spoon pizza sauce in middle of dough, then dot with ricotta and top with pepperoni and mozzarella.  Gently fold dough in half, dampen seams with water and pinch together, then crimp edges all around. Repeat with remaining dough. Transfer to prepared baking sheets. Brush tops with oil and sprinkle with salt. Using kitchen scissors or a sharp knife, slit tops in 2 to 3 spots to create steam vents.  Bake until tops are golden and filling is bubbling, 20 minutes, brushing with more oil halfway through. Let cool 5 minutes before cutting open.
