La lubina (Sea Bass) no es sólo un pescado; hay varias variedades de pescado de mar de la familia del mero. Tiene carne magra o con poca grasa. Ásalo, escálfalo o fríelo. Cocínalo de cualquier manera; es delicioso con esta mantequilla .

2 cucharadas de mantequilla o de margarina, suavizada a la temperatura ambiente
1 cucharada de aceitunas Kalamata, finamente picadas
2 cucharaditas de perejil fresco, picado
1/2 cucharadita de vinagre balsámico
1/4 cucharadita de cáscara de naranja, rallada
1 lb de filetes de lubina, de salmón o de pargo, de 1 pulgada de grueso
1 cucharada de aceite de oliva o de aceite vegetal
1/4 cucharadita de sal
1/8 cucharadita de pimienta

Steps:

  • En un tazón pequeño, mezcla todos los ingredientes para la Mantequilla Cítrica y de Olivo. Refrigera 30 minutos o hasta que esté firme.
  • Calienta una parrilla sobre carbón o gas, a fuego directo. Unta toda la superficie del pescado con aceite; espolvorea sal y pimienta.
  • Tapa y asa el pescado a fuego medio, de 10 a 13 minutos; voltéalo luego de 5 minutos, hasta que el pescado forme hojuelas con facilidad al introducir un tenedor. Sírvelo con la Mantequilla Cítrica y de Olivo.
