Making scrambled eggs is fun – just remember that eggs are delicate and will continue to cook even after you’ve taken them off the heat, so it’s really important to remove them just before they’re ready, so that they’ll be just right by the time you come to eat them.

8 large free-range eggs
1 small knob of unsalted butter

Steps:

    1. Crack the eggs into a measuring jug.
    2. Add a tiny pinch of sea salt and black pepper, then use a fork to beat them together well.
    3. Put a medium saucepan over a low heat and add the butter.
    4. Leave it to melt slowly, then when it starts to bubble carefully pour in the eggs.
    5. Stir slowly with a wooden spoon, or a spatula if you’ve got one, so you can get right to the edges of the pan.
    6. Keep gently stirring until the eggs still look silky, slightly runny and slightly underdone, and then remove from the heat – the heat of the pan will continue to cook the eggs to perfection.
    7. Serve with lightly buttered toast.

2 large free range eggs
6 tbsp single cream or full cream milk
a knob of butter

Steps:

  • Lightly whisk 2 large eggs, 6 tbsp single cream or full cream milk and a pinch of salt together until the mixture has just one consistency.
  • Heat a small non-stick frying pan for a minute or so, then add a knob of butter and let it melt. Don’t allow the butter to brown or it will discolour the eggs.
  • Pour in the egg mixture and let it sit, without stirring, for 20 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan.
  • Let it sit for another 10 seconds then stir and fold again.
  • Repeat until the eggs are softly set and slightly runny in places. Remove from the heat and leave for a moment to finish cooking.
  • Give a final stir and serve the velvety scramble without delay.
