Scallop Tacos with Cabbage Slaw and Avocado Sauce

1 large ripe Hass avocado, diced
½ cup/120 milliliters water
¼ cup/6 grams loosely packed fresh cilantro leaves and tender stems
1 large jalapeño chile pepper, seeded and coarsely chopped
1 tablespoon fresh lime juice
1 large garlic clove
Kosher salt
Freshly ground black pepper
3 tablespoons extra-virgin olive oil
Finely grated zest of 1 lime
2 tablespoons fresh lime juice
2 large garlic cloves, grated or minced
24 sea scallops, each 1 to 1½ ounces
1 cup/75 grams thinly sliced green cabbage, rinsed under cold water
? cup/40 grams thinly sliced red onion, rinsed under cold water
8 corn or flour tortillas (6 to 8 inches)

Steps:

  • In a blender combine the sauce ingredients and process until smooth. Season with salt and pepper. Transfer to a small serving bowl. Set aside at room temperature until ready to serve.
  • In a large bowl whisk the marinade ingredients, including 1 teaspoon salt and ¼ teaspoon pepper. Remove the small, tough side muscle that might be left on each scallop. Add the scallops to the marinade and turn to coat evenly. Cover and marinate at room temperature for 15 to 20 minutes while the grill preheats.
  • Prepare the grill for direct cooking over high heat (450° to 550°F).
  • In a medium bowl combine the cabbage and onion.
  • Brush the cooking grates clean. Lift the scallops one at a time from the marinade, letting the excess marinade drip back into the bowl. Discard the marinade. Grill the scallops over direct high heat, with the lid closed, until lightly browned and just opaque in the center, 4 to 6 minutes, turning once or twice. Remove from the grill.
  • Warm the tortillas over direct high heat for about 10 seconds on each side.
  • Fill each tortilla with some of the cabbage mixture and three scallops. Top with the sauce and serve right away.

1 pound fresh, dry-packed bay scallops (30/40 count)
1 tablespoon olive oil
½ teaspoon black pepper
1?¼ teaspoons kosher salt, divided
2 ears fresh corn, husks removed
3 scallions
1 to 2 jalapeno chiles
? cup chopped fresh cilantro (leaves and tender stems)
1?½ tablespoons fresh lime juice
1 large, ripe avocado
8 (6-in.) corn tortillas, warmed
Lime wedges

Steps:

  • Preheat grill to medium (about 450°F). Toss together the scallops, olive oil, black pepper, and 1/2 teaspoon of the salt in a large bowl until scallops are evenly coated; chill until ready to use.
  • Grill the corn, scallions, and jalapeños, turning often, until charred and tender and the corn begins to release its juices, 5 to 7 minutes. Remove from grill; cool 5 minutes.
  • Cut corn kernels from cobs into a medium bowl; discard cobs. Finely chop the scallions; add to the corn kernels. Remove stems and seeds from the jalapeños. Finely chop jalapeños, and add to corn and scallions. Stir in cilantro, lime juice, and 1/2 teaspoon of the salt.
  • Cut avocado in half; scoop avocado pulp into a bowl. Add remaining 1/4 teaspoon salt, and mash with a fork until mostly smooth.
  • Grill scallops in a hot grill pan until grill marks appear, 1 1/2 to 2 minutes on each side. Remove from heat.
  • Spread each warm corn tortilla with avocado mixture; top with 4 or 5 grilled scallops and a spoonful of corn pico. Serve with lime wedges.

This is surprisingly fast to make and since scallops are sliced 1/2 to 1/3 horizontally (depending on size), they grill up very quickly on the pan. If scallops are large, then 1 taco equals 1 large scallop. But, if you are using medium or smaller scallops, you may need to use more scallops per taco. I love the creaminess of this avocado sauce which goes really well with other grilled fish or seafood items too.
