Mom's friend gave her this recipe for Crock-Pot scalloped potatoes and ham years ago, and she shared it with me. When we have leftover ham to use up, it's the most-requested recipe at my house. —Kelly Graham, St. Thomas, Ontario

10 medium potatoes (about 3 pounds), peeled and thinly sliced
3 cups cubed fully cooked ham
2 large onions, thinly sliced
2 cups shredded cheddar cheese
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 teaspoon paprika
1/4 teaspoon pepper

Steps:

  • In a greased 6-qt. slow cooker, layer half of the potatoes, ham, onions and cheese. Repeat layers. Pour soup over top. Sprinkle with paprika and pepper., Cover and cook on low for 8-10 hours or until potatoes are tender.

This is a great soup for using up yesterday's leftovers. Try making my 'Really Good Scalloped Potatoes' recipe, then whip up this soup with the leftovers. A very versatile and easy recipe, add, omit, experiment! Serve with crusty buttered bread.

4 cups leftover scalloped potatoes
4 cups chicken broth, or as needed
1 tablespoon garlic powder
salt and pepper to taste
1 cup cubed cooked ham
1 cup shredded Cheddar cheese
¼ cup grated Parmesan cheese

Steps:

  • Place the scalloped potatoes into a large pot, and pour in enough chicken broth to cover the potatoes completely. Season with garlic powder, salt and pepper. Add ham if using. Bring to a boil, and reduce heat to low. Stir in the Cheddar and Parmesan cheese, and simmer for about 10 minutes.

A steaming dish of these on a cold day will make your tummy cozy! I LOVE scalloped potatoes-- these are sooooo creamy. I love them as a side dish, and I've made this into a one-dish casserole when I want it for dinner. Note: I usually double this recipe, as it goes quickly with my kids! If you double the recipe, too, add a can of cream of chicken or cheddar cheese soup to help thicken.

CROCKPOT SCALLOPED POTATOES & HAM | JUST A PINCH RECIPES
I tried this recently and found the moisture content wasn't enough to cook the potatoes thoroughly, without adding the milk to the soup. If you don't want to use milk, mix the soup with water. You can even choose to use cream of chicken, cream of onion/potato, or cheddar cheese soup. I love my mom's scalloped potatoes but I can't stand the shallow dish resulted in cooking in the baking pans, and I was looking for a nice deep dish recipe for my favorite creamy, cheesy potatoes! The crockpot does this wonderfully. Watch your cooking times. My grandma's old Rival Crockpot takes a bit longer than a newer, non-stick metal one might. A long clean butter knife inserted into the middle, all the way down to the bottom of the dish should come out fairly clean (but probably cheesy!) and not have much resistance when you poke into the potatoes (or when pulling the knife out).
