Cook, stirring often, until soft and beginning to brown, 8 to 10 minutes. Add garlic, thyme, and 1 squash and cook, stirring occasionally, until soft, 8 to 10 minutes (add up to 1/4 cup water if pot starts to get too dark). Stir in Dijon and honey. Add beans, stock, and 1 cup water. Cover and transfer to oven. Bake until beans are nearly tender, 1 1/2 to 2 hours. Meanwhile, toss scallions, remaining squash, and 2 tablespoons oil in a bowl. Season with salt and pepper. Uncover pot, stir in vinegar, and top with squash and scallions. Bake, uncovered, until beans are tender and liquid is reduced and thickened, 1 to 1 1/2 hours. Turn oven to broil. Broil until scallions and squash are golden and lightly charred, 4 to 6 minutes. Cool slightly before serving.

Making jian bing is a specialized skill and not easily recreated, but this approximation delivers the pleasure and convenience of an omelet cooked onto a thin pancake, the pancake here being store-bought flour tortillas. When warmed, they share the comforting chewiness of the original. This version uses a few essential condiments: Pickled mustard greens, hoisin and chile paste can be found in Chinese or Asian markets or online. But you can, of course, leave them out. In fact, kids often prefer just the egg and tortilla.
