This savory stuffed French toast is what brunch dreams are made of! Ciabatta bread, prosciutto and mozzarella all come together with an amazing custard.

1/2 loaf Ciabatta Bread
0.25 pound Prosciutto
4 slice Fresh Smoked Mozzarella
5 Egg
1/2 cup Milk
1/4 cup Pecorino Romano Cheese
1 pinch Truffle Salt
1 pinch Freshly Ground Black Pepper
1/2 teaspoon Dried Basil
1/2 teaspoon Dried Oregano
1 tablespoon Butter

Steps:

  • Take the Ciabatta Bread (1/2 loaf) and slice it into 4 thick, equal slices. Remove the heel and set it aside to dip in pasta sauce later! Then gently slice an opening through the middle of each slice to make a large pocket for the filling.
  • Stuff each slice with 1/4 of the Prosciutto (0.25 pound) and a slice of the Fresh Smoked Mozzarella (4 slice).
  • Combine the Egg (5), Milk (1/2 cup), Pecorino Romano Cheese (1/4 cup), Truffle Salt (1 pinch), Freshly Ground Black Pepper (1 pinch), Dried Basil (1/2 teaspoon), and Dried Oregano (1/2 teaspoon) in a large mixing bowl and whisk it all together.
  • Soak the stuffed bread slices in that mixture for 5 minutes on each side.
  • While the bread finishes soaking in the custard, preheat an electric griddle to 350 degrees F (180 degrees C) or a large griddle pan over medium high heat.
  • Grease the griddle with the Butter (1 tablespoon). Take the bread right out of the custard and onto the griddle to cook for 3 minutes on each side.
  • Cook them for another 2 minutes on each side. If necessary, reduce the heat and keep flipping the toast every couple of minutes, until the mozzarella is melted without burning the outside.
  • Serve the savory French toast immediately and enjoy!

Both sweet and savory, this make-ahead brunch entree is stuffed with ham and Gruyere cheese and served with maple syrup. This family-friendly dish goes well with a green salad.

Unsalted butter, room temperature, for baking dish
1 14-inch loaf rustic bread, such as pane Pugliese, cut into 8 slices
8 thin slices ham, plus more for topping (optional)
8 ounces Gruyere, thinly sliced, plus more for topping (optional)
8 large eggs
2/3 cup whole milk
Coarse salt and freshly ground pepper
Pure maple syrup, such as Noble

Steps:

  • Butter bottom and sides of a 9-by-13-inch baking dish. Make a deep slit in each bread slice to create a pocket. Stuff each with 1 slice of ham, then divide cheese evenly among pockets.
  • Whisk together eggs and milk in a bowl until combined, and season with salt and pepper. Pour egg mixture into prepared baking dish. Add bread slices in a single layer, gently pressing into egg mixture, and let soak 15 minutes. Flip bread You can soak the bread in the egg mixture for just 30 minutes, but the French toast will be even more delicious if you let it sit overnight. and gently press again into egg mixture. Let soak 15 minutes. (If preparing the day before, refrigerate up to 12 hours, loosely covered, then let stand at room temperature 30 minutes.)
  • Preheat oven to 350 degrees. Top bread with remaining ham and cheese. Bake until egg mixture is set and cheese is melted, 20 to 25 minutes.
  • Turn oven to broil, with rack 4 to 6 inches from heat source. Broil until bread is toasted and golden brown, 1 to 2 minutes. Serve hot with maple syrup.
