SWORDFISH WITH SAVORY GINGER SOY SAUCE RECIPE - FOOD.COM

Swordfish With Savory Ginger Soy Sauce Recipe - Food.com image

DH and I made this for dinner a couple of nights ago and really enjoyed the combination of ginger and soy with the swordfish. From Keiko O Aoki's "Easy and Healthy Japanese Food for the American Kitchen." I should mention that I always use reduced sodium soy sauce (I prefer San-J Tamari).

Total Time 25 minutes

Prep Time 10 minutes

Cook Time 15 minutes

Yield 4 serving(s)

Number Of Ingredients 12

4 pieces swordfish fillets
2 green onions, finely chopped
4 slices fresh lemon rind
2 small tomatoes, wedged
1/2 cup flour
4 tablespoons vegetable oil
salt, to taste
pepper, to taste
2 1/2 tablespoons butter
2 inches fresh ginger, peeled and thinly shredded
4 tablespoons white wine
2 tablespoons soy sauce

Steps:

  • To make the sauce, melt the butter in a small frying pan. Add the thinly shredded ginger and slowly saute over low heat. Add the white wine and soy sauce to complete the sauce.
  • Place the swordfish filets on a plate and sprinkle with salt and pepper on both sides. Lightly coat the filets with flour.
  • Heat the vegetable oil in a frying pan and place the swordfish filets in pan, frying until both sides are nicely browned and cooked through.
  • Serve on a plate with lemon rinds and finely chopped green onion on top. Pour the sauce on the fish. Serve with tomatoes on the side for garnish.

SOY SAUCE NOODLES | LOVE AND OLIVE OIL

Soy Sauce Noodles | Love and Olive Oil image

Thin egg noodles stir fried until just crisp, and then tossed with a sweet and savory soy-based sauce, crunchy bean sprouts, green onions, and carrot.

Provided by Love and Olive Oil

Total Time 30 minutes

Yield 2 side servings

Number Of Ingredients 12

1 tablespoon soy sauce
*
or tamari
2 teaspoons sesame oil
2 teaspoons dark brown sugar
1 teaspoon sriracha
2 tablespoons vegetable oil, divided
2 garlic cloves, minced
2 green onions, sliced into matchsticks, white/light green and darker green parts separated
1 medium carrot, thinly sliced into matchsticks or ribbons
3 ounces bean sprouts**

Steps:

  • In a small bowl, whisk together soy sauce, dark soy sauce, Shaoxing wine, sesame oil, sugar, and sriracha. Set aside.Bring a large pot of water to a boil. Add noodles and cook for 2 to 3 minutes or until tender. Drain and rinse under cool water. In a large skillet or wok, heat 1 tablespoon vegetable oil over medium-high until it shimmers. Add noodles and cook for 2-3 minutes, without stirring, until bottoms are slightly browned. Flip over as best you can and let cook for another 2 minutes. (Even though the noodles will not get entirely crispy, this step helps dry them out so they do not stick and absorb all the flavorful sauce.) Slide noodles onto a plate and set aside temporarily.Return skillet to medium-high heat with remaining 1 tablespoon oil. Add garlic along with white and light green parts of green onion and quickly sautée until fragrant, about 30 seconds. Return noodles to skillet along with soy sauce mixture. Toss well with a pair of tongs or chopsticks, breaking up clumps of noodles as you go, until noodles are entirely coated, about 2 to 3 minutes. Add dark green parts of green onion, carrot ribbons, and bean sprouts and cook for 1 minute more or until  just softened.Remove from heat and divide among bowls; serve immediately.

ALL-PURPOSE STIR-FRY SAUCE (BROWN GARLIC SAUCE) RECIPE ...
Adapted from Martin Yan's Chinese Cooking for Dummies. This is my favorite stir-fry sauce. It makes enough for two meals. Having extra on hand makes for a quick meal. My son will actually eat vegetables he can dip in the sauce! WARNING about the amount of soy sauce. When I used Kikkoman soy sauce, I found this sauce far too salty. I now use Angostura, which is much lower in salt. When adding soy sauce, start with less than half the amount and slowly add more to taste. Using vegetable broth makes this vegetarian. Yield: 1 3/4 cups (couldn't get that amount entered)

WHAT IS SOY SAUCE & 40+ RECIPES THAT USE SOY SAUCE!
Light soy sauce is the thin, brown liquid that most Americans refer to as regular soy sauce, but light is not necessarily low sodium. Make sure you look for low sodium and that will also be light (usually a green bottle). Dark soy sauce has added molasses after brewing which thickens, adds layers of flavor and also gives a sweet aftertaste.
