8 slice(s) french bread or sourdough bread, thickly sliced
BATTER
1/2 cup(s) buttermilk
2 - eggs, at room temperature & well beaten
1 teaspoon(s) kosher salt
1/2 teaspoon(s) thyme, leaves, minced
1/2 teaspoon(s) oregano, dried
1/4 teaspoon(s) white pepper
1 pinch(es) cayenne pepper
FILLING
1/2 to 3/4 cup(s) sharp cheddar, finely grated
1/4 to 1/2 cup(s) fontina cheese, finely grated
3 tablespoon(s) parmigiano-reggiano, grated
2 tablespoon(s) butter, unsalted at room temperature

Steps:

  • In a casserole dish, combine the buttermilk, beaten eggs, salt, pepper, thyme, oregano and cayenne pepper.
  • In a mixing bowl, whisk the softened butter, then fold in the grated cheese. Divide into four equal parts and spread on toast. Cover with an additional slice.
  • Preheat a non-stick skillet over medium high heat.
  • Dredge each sandwich in the batter, coating each side. Place in skillet and brown top and bottom and the cheese is melted; about 4 to 5 minutes per side.
  • Serve with a beer and a steaming hot bowl of your favorite tomato soup. Enjoy!

10 slices French bread (1 inch thick)
1 pound bulk pork sausage
8 large eggs
2 cups 2% milk
1/2 cup grated Parmesan cheese
1 tablespoon minced chives
1/2 teaspoon pepper
1 cup shredded cheddar cheese
Additional minced chives

Steps:

  • Preheat oven to 350°. Arrange bread in a single layer in a greased 13x9-in. baking dish. In a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. , In a large bowl, whisk eggs, milk, Parmesan, chives and pepper; pour over bread. Add sausage; sprinkle with cheese. , Bake, uncovered, 25-30 minutes or until edges are golden and a knife inserted in the center comes out clean. Let stand 5 minutes before cutting. Sprinkle with additional chives., To Make Ahead: Prepare casserole as directed. Refrigerate, covered, several hours or overnight. To use, preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, as directed. Sprinkle with additional chives.
