SWEET AND SAVORY CARROTS RECIPE | FOOD NETWORK



Sweet and Savory Carrots Recipe | Food Network image

These carrots make for a quick and tasty side dish that is sweet, savory and tender using only a few ingredients you already have in your pantry! Mix the sweet elements, maple syrup and cinnamon, and the savory, cumin and black pepper, and you get this deliciously nutritious side dish.

Yield 4 to 6 servings

Number Of Ingredients 8

18 to 20 small field or multicolored carrots
Kosher salt
2 tablespoons (28 grams) unsalted butter
2 tablespoons (30 milliliters) pure maple syrup
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
Freshly ground black pepper
2 tablespoons toasted sesame seeds

Steps:

  • Bring a large saucepan of water to a boil over high heat. Wash or peel the carrots, trim off the greens if still attached and cut any thicker ones in half lengthwise. Season the water well with salt and cook the carrots for 3 minutes just to soften slightly; drain and set aside. If you’re looking to get ahead, you can do this step up to a day in advance.
  • Place a large skillet over medium heat and add in the butter. Melt, stirring occasionally, until it bubbles, then subsides and begins to brown slightly, about 2 minutes. Add the syrup, cumin, cinnamon and pepper. Add the carrots and toss to coat. Cook until the carrots are tender but still a bit snappy, about 5 minutes.
  • Transfer the carrots to a serving dish and scatter with the toasted sesame seeds.

I created this recipe as an alternative to the sweet carrot soufflé recipes that abound.  It is a rather unusual and elegant side dish, yet made with the humble carrot as main ingredient. It is a blank canvas, The herbs can be changed out for other flavors, such as curry, for example.

Number Of Ingredients 9

1 1/2-2 lbs carrots
1 tablespoon fresh thyme leave
3 -4 fresh mint leaves
1/4-1/2 lb butter
3 eggs
1/4 cup white flour
1 1/4 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven, 350°F.
  • Cut carrots into chunks and cook until very soft. Drain thoroughly.
  • Place into blender along with next three ingredients.  No need to melt butter if carrots are still hot.  Puree.
  • Combine flour and baking powder.
  • Thoroughly whisk eggs and gradually add flour mixture.
  • Combine carrot and eggs mixtures, add salt and pepper to taste, Spoon mixture into a lightly greased 1 1/2 quart souffle dish and place into hot oven immediately.
  • Bake until set and serve hot from the oven.
