SAVORY CARROT SOUFFLE RECIPE - FOOD.COM
I created this recipe as an alternative to the sweet carrot soufflé recipes that abound. It is a rather unusual and elegant side dish, yet made with the humble carrot as main ingredient. It is a blank canvas, The herbs can be changed out for other flavors, such as curry, for example.

Steps:
- Preheat oven, 350°F.
- Cut carrots into chunks and cook until very soft. Drain thoroughly.
- Place into blender along with next three ingredients. No need to melt butter if carrots are still hot. Puree.
- Combine flour and baking powder.
- Thoroughly whisk eggs and gradually add flour mixture.
- Combine carrot and eggs mixtures, add salt and pepper to taste, Spoon mixture into a lightly greased 1 1/2 quart souffle dish and place into hot oven immediately.
- Bake until set and serve hot from the oven.

Steps:
- Bring a large saucepan of water to a boil over high heat. Wash or peel the carrots, trim off the greens if still attached and cut any thicker ones in half lengthwise. Season the water well with salt and cook the carrots for 3 minutes just to soften slightly; drain and set aside. If you’re looking to get ahead, you can do this step up to a day in advance.
- Place a large skillet over medium heat and add in the butter. Melt, stirring occasionally, until it bubbles, then subsides and begins to brown slightly, about 2 minutes. Add the syrup, cumin, cinnamon and pepper. Add the carrots and toss to coat. Cook until the carrots are tender but still a bit snappy, about 5 minutes.
- Transfer the carrots to a serving dish and scatter with the toasted sesame seeds.

Place the carrots, 1/3 cup water, the salt, and pepper in a large (10- to 12-inch) saute pan and bring to a boil.
