My ex-wife Jamie's been making this savory Brie en croute since way back before we were married. I think she must have gotten the idea from a magazine, but I've never seen the recipe... I just wing it. It can be made with either puff pastry sheets (quick and easy) or phyllo sheets (more work, flakier shell). Serve with fancy table crackers or digestive biscuits.

Number Of Ingredients 7

1 shallot, minced
2 cloves garlic, minced
¼ teaspoon white pepper
1 tablespoon dry vermouth
1 (8 ounce) round Brie cheese
3 sheets phyllo dough
2 tablespoons melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Stir the shallot, garlic, white pepper, and vermouth together in a small bowl; set aside. Cut the rind off the top of the brie cheese, leaving a 1/4-inch lip around the edge. Place the brie cheese onto a baking sheet, and spoon the shallot mixture over top. Fold the phyllo sheets in half to make square pieces. Wrap the brie with the phyllo squares, tucking the edges underneath of the brie cheese. Trim the corners if needed to avoid tucking too much pastry underneath. You want complete enclosure, but without too much overlap. Brush the top with melted butter to make the pastry brown in the oven.
  • Bake in the preheated oven until the phyllo has turned golden brown and the brie cheese is very soft, about 20 minutes. Serve warm.

Holiday appetizer recipe featuring tomatoes, onion and apricot preserves simmered with balsamic vinegar and served over baked Brie cheese

Number Of Ingredients 9

2 wheels (8 oz each) Brie cheese
1 tablespoon canola oil
3/4 cup chopped yellow onion
1 tablespoon finely chopped garlic
1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, drained, 1/4 cup liquid reserved
1/4 cup apricot preserves
1 tablespoon balsamic vinegar
1/8 teaspoon ground black pepper
Toasted sliced bread or crackers, optional

Steps:

  • Preheat oven to 375°F. Place cheese on shallow baking pan; bake 15 minutes or until cheese softens.
  • Meanwhile, heat oil in small saucepan over medium-high heat. Add onion; cook 3 to 5 minutes or until tender. Add garlic; cook until fragrant. Add drained tomatoes, reserved tomato liquid, preserves, vinegar and pepper. Reduce heat to medium and cook 10 to 15 minutes, stirring occasionally.
  • Divide tomato mixture evenly and place on top of each wheel of cheese. Serve with bread or crackers, if desired.
