I have stuffed peppers forever. This is the culmination of many trial and error versions. Hope you enjoy them!

6 large anaheim peppers, seeded
6 - strips of thick sliced bacon
1/2 - container of orig. philly cooking cream
1/2 - container of italian herb and cheese philly cooking cream
1/2 pound(s) jimmy dean (or your favorite brand) breakfast sausage (half a roll)

Steps:

  • Mix the cooking creams and the raw sausage together in a bowl until well blended. Set aside.
  • Slit each pepper and remove all the seeds
  • Stuff sausage mixture into peppers evenly.
  • Wrap one slice of bacon around each pepper, starting by stuffing the tip of the bacon into the top of the slit in the pepper and finishing by stuffing the other tip of the bacon into the bottom of the slit in the pepper.
  • Place peppers on a broiler pan and stuff them in a 450 degree oven for twenty minutes. Pull em out, turn em over, stuff em back in and let em hang out for another ten minutes.
  • Pull em out of the oven and let them set for about ten minutes. ENJOY!! oh... you can also put these little jewels on the grill.....

A sausage stuffed pepper recipe shared by the firemen that my husband works with. We like this recipe with anaheim peppers, but have also used bell peppers. This is excellent with a pan of skillet corn bread.

Prep Time 10 minutes

Cook Time 15 minutes

Yield 4-6 serving(s)

Number Of Ingredients 5

1 lb breakfast sausage, I use Jimmy Dean Hot
1 (8 ounce) package cream cheese
6 -8 anaheim chilies, sliced horizontally and seeded
1/8 teaspoon ground black pepper
3 -4 dashes hot pepper sauce (I use tobasco)

Steps:

  • Cook and drain sausage, return to hot frying pan.
  • Add cream cheese and stir into sausage until melted.
  • Add black pepper to sausage mixture.
  • Fill peppers with the sausage mixture and bake at 350 degrees for 15 to 20 minutes. ( you want the peppers to be crisp-tender).
  • Add tobasco sauce to each pepper to taste.
  • This is excellent served with cornbread and butter.
