4 ounces uncooked spaghetti
1/2 pound smoked turkey kielbasa, diced
1 cup garden-style spaghetti sauce
1 cup reduced-fat ricotta cheese
3 egg whites
1/3 cup grated Parmesan cheese
1/4 cup shredded part-skim mozzarella cheese

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a small nonstick skillet, saute sausage for 3-4 minutes or until browned; stir in spaghetti sauce. , In a small bowl, combine ricotta cheese and 1 egg white; set aside. Drain spaghetti; add Parmesan cheese and remaining egg whites. Press onto the bottom and up the sides of a 9-in. deep-dish pie plate coated with cooking spray. Spoon ricotta mixture into crust. Top with sausage mixture. , Bake, uncovered, at 350° for 20 minutes. Sprinkle with mozzarella cheese. Bake 5 minutes longer or until cheese is melted and filling is heated through. Let stand for 5 minutes before slicing.

8 oz. uncooked spaghetti or vermicelli
1 lb. bulk Italian sausage
1 1/2 cups frozen bell pepper stir-fry
1 (14.5-oz.) can diced tomatoes with garlic, oregano and basil, undrained
1 (8-oz.) can tomato sauce
1 (2 1/4-oz.) can sliced ripe olives, drained
2 eggs
1 oz. (1/4 cup) shredded fresh Parmesan cheese
2 tablespoons chopped fresh parsley
2 to 4 oz. (1/2 to 1 cup) shredded mozzarella cheese

Steps:

  • Heat oven to 350°F. Grease 9 1/2 or 10-inch deep-dish glass pie pan. Cook spaghetti to desired doneness as directed on package. Drain.
  • Meanwhile, in large nonstick skillet, brown sausage over medium-high heat, stirring occasionally. Drain.
  • Stir in bell pepper stir-fry, tomatoes, tomato sauce and olives. Bring to a boil. Reduce heat to medium; cook 5 to 8 minutes or until vegetables are tender and mixture is slightly thickened, stirring occasionally.
  • In medium bowl, beat eggs; stir in Parmesan cheese. Add cooked spaghetti and parsley; mix well. Spread evenly over bottom and up sides of greased pan. Spoon sausage mixture over spaghetti.
  • Bake at 350°F. for 25 to 30 minutes or until spaghetti mixture is set. Sprinkle with mozzarella cheese; bake an additional 5 minutes or until cheese is melted.

  • 1. Heat the oven to 190C. Cut the skins off the sausages and break the meat up into little pieces. Heat the olive oil in a large non-stick frying pan, then fry the sausage meat until brown, breaking it up with a wooden spoon until it’s like mince.

    2. Remove the sausage meat with a slotted spoon from the pan and set aside. Add the carrots, celery and fennel to the pan and fry for 10 mins until they are beginning to soften, then add the garlic and cook for 2 mins.

    3. Add the passata, fennel seeds and lemon zest, then return the sausage meat to the pan and season with salt and pepper. Cover and simmer gently for 15 mins.

    4. Cook the spaghetti in a pan of boiling, salted water for 12 mins or according to packet instructions. Drain, reserving 2 tbsp of the cooking water. Tip the spaghetti into a bowl with the reserved water, cre`me fraiche and basil. Season with salt and pepper and mix together well.

    5. Tip the sausage mixture into a large oven proof dish with high sides, then top with the spaghetti. Don’t mix the sausage mixture and spaghetti together as the spaghetti is acting like a pie lid.

    6Break the mozzarella into small pieces and dot over the top of the spaghetti. Sprinkle over the cheddar and parmesan, then bake in the oven for 15-20 mins, until golden brown and crispy on top.
