1 pound bulk pork sausage
1 small onion, chopped
1/2 green pepper, chopped
1 can (4 ounces) mushroom stems and pieces, drained
1 tablespoon butter
6 large eggs, beaten
8 flour tortillas (8 inches), warmed
1 cup shredded cheddar cheese
Salsa, optional

Steps:

  • In a large skillet, brown sausage. Drain, reserving 2 tablespoons drippings. Saute the onion, green pepper and mushrooms in drippings until tender., In another skillet, melt butter over medium-high heat. Add eggs; cook and stir until set., Divide sausage mixture among tortillas; top with eggs and cheese. Fold bottom of tortilla over filling and roll up. Serve with salsa if desired.

6 Mission Whole Wheat+ Chia & Quinoa Tortilla Wraps, warmed
2 tsp. Vegetable oil
8 oz. Chicken breakfast sausage
9 Large eggs
quarter tsp. Salt
1 cup (4 oz) Monterey Jack cheese
6 tbsp. Salsa or Pico de Gallo

Steps:

  • In a nonstick skillet heat oil over medium. Add sausage and cook, breaking up meat, until cooked through, 6-8 minutes. Transfer to a small bowl.
  • Place skillet back on the heat. In a medium bowl whisk eggs with salt. Add eggs to skillet and cook, stirring until scrambled. Then stir in sausage.
  • Lay wraps flat. Divide egg mixture, cheese, and salsa between wraps. Fold in sides, then fold bottom of wraps over filling and roll up tightly. Serve immediately.

Here in Arizona that's easy, but in the midwest that can be difficult. The trick is heating the tortillas in a hot skillet prior to rolling into the burro. We like Herdez Salsa which is available is most grocery stores, or use your favorite chunky salsa.
