Ingredients

2 pounds pork butt (2 1/2 pounds with bone), diced into 1/4-inch pieces
1/2 pound fat back, diced into 1/4-inch pieces
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
2 teaspoons finely chopped fresh sage leaves
2 teaspoons finely chopped fresh thyme leaves
1/2 teaspoon finely chopped fresh rosemary leaves
1 tablespoon light brown sugar
1/2 teaspoon fresh grated nutmeg
1/2 teaspoon cayenne pepper
1/2 teaspoon red pepper flakes

Steps:

Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.

1 teaspoon(s) salt
1/4 teaspoon(s) garlic salt
1/2 teaspoon(s) parsley flakes
3/4 teaspoon(s) ground sage
1/4 teaspoon(s) ground black pepper
1/4 teaspoon(s) thyme, dried
1/4 teaspoon(s) crushed red pepper flakes
1/4 teaspoon(s) msg
1/8 teaspoon(s) oregano, dried

Steps:

Mix the seasonings into the meat. It's best if you do this ahead of time to give the flavors a chance to incorporate, but it will still taste great if you cook it right away.
Once you have your sausage mixed, Then form into patties using your hands. cook as you would Jimmy dean breakfast sausage.
We've also used ground turkey in place of the ground pork and had good results . While msg is generally a frowned upon ingredient, it does offer great flavor or it can be left out altogether without any issue.

Press onto the bottom and up the sides of pan to form a crust; seal seams. Bake until golden brown, 11-13 minutes., Meanwhile, in a large skillet over medium heat, cook sausage, onion and green pepper until sausage is no longer pink, breaking into crumbles; drain. Prepare gravy according to package directions. Stir into sausage mixture; set aside., In a small bowl, whisk eggs, milk, salt and pepper. In a large skillet, heat butter over medium heat. Add egg mixture; cook and stir until almost set. Spread gravy mixture over crust. Top with eggs, mushrooms and cheeses. Bake until eggs are set and cheese is melted, 5-10 minutes. If desired, sprinkle with chives.
