4 ounce breakfast sausage, casings removed
1 tablespoon mccormick perfect pinch natural roasted garlic & bell pepper seasoning
6 eggs
2 tablespoon milk
1 tablespoon butter
6 small flour tortillas, warmed
1/4 cup shredded mexican cheese blend
1 medium ripe avocado, peeled, pitted and sliced

Steps:

  • Heat medium skillet on medium-high heat.
  • Add sausage and seasoning; cook and stir until sausage is browned and crumbled.
  • Remove sausage from pan; keep warm.
  • Drain fat from pan.
  • Beat eggs and milk in medium bowl with wire whisk.
  • Melt butter in same skillet on medium heat.
  • Add egg mixture; cook and stir until eggs are firm.
  • For each taco, place 1 tortilla on plate.
  • Top with eggs, sausage, cheese and avocado.
  • Sprinkle with additional seasoning, if desired.

Breakfast tacos are very popular in San Antonio. These are one of our favorites.

Number Of Ingredients 5

4 - eggs
6 (6 in.) - flour tortillas
1/2 pound(s) breakfast sausage.
1/4 cup(s) grated mexican blend cheese
- picante sauce (optional)

Steps:

  • Brown the sausage, crumbling it as it cooks. Drain off the grease.
  • Beat the eggs well. Pour into the skillet with the sausage.
  • Cook stirring often until the eggs are done.
  • Divide the sausage mixture evenly between the 6 torlillas, placing it in the center of each.
  • Sprinlke each with cheese. Add picante sauce if desired.
  • Roll each taco. Serve warm.
