Breakfast tacos are very popular in San Antonio. These are one of our favorites.

Number Of Ingredients 5

4 - eggs
6 (6 in.) - flour tortillas
1/2 pound(s) breakfast sausage.
1/4 cup(s) grated mexican blend cheese
- picante sauce (optional)

Steps:

  • Brown the sausage, crumbling it as it cooks. Drain off the grease.
  • Beat the eggs well. Pour into the skillet with the sausage.
  • Cook stirring often until the eggs are done.
  • Divide the sausage mixture evenly between the 6 torlillas, placing it in the center of each.
  • Sprinlke each with cheese. Add picante sauce if desired.
  • Roll each taco. Serve warm.

Fully Cooked Original Pork Sausage Patties
each chopped red and green bell pepper
eggs
milk
butter
corn tortillas (6 inch)
(4 ounces) shredded cheddar cheese
chopped fresh cilantro
Salsa for serving (optional)

Steps:

  • Cook sausage and bell peppers in large nonstick skillet over MEDIUM heat 5-6 minutes or until sausage is thoroughly heated, stirring frequently. Remove from skillet; cover to keep warm.
  • Beat eggs and milk in large bowl with wire whisk until well blended. Melt butter in same skillet over MEDIUM-LOW heat. Add eggs; cook and stir 6-8 minutes or just until set. Stir in sausage mixture; cook 1-2 minutes or until thoroughly heated. Remove from heat.
  • Top each tortilla with about ½ cup egg mixture, ½ cup cheese and 2 tablespoons cilantro.
  • Serve with salsa, if desired.
