SAUSAGE AND BEAN CASSEROLE | SAINSBURY'S RECIPES
Sausage and beans has to be every kid’s favourite meal. This healthier sausage and bean casserole recipe includes baby spinach, red peppers and cherry tomatoes, and is best served with crusty bread for a fuss-free weeknight supper.

Preheat the oven to 200°C/fan 180°C/gas mark 6. Place the sausages in a deep, large oven tray and drizzle with the oil. Roast for 15 minutes.
Remove the tray from the oven and add the onion and peppers. Roast for a further 10 minutes, then stir through the baked beans and spinach and top with the tomatoes. Season with black pepper and bake for a further 15 minutes until cooked. Garnish with the parsley and serve with crusty bread.

Steps:
- Heat the oil over a high heat in a large casserole dish and add the sausages. Brown all over, then lift out on to a plate.
- Add the onion and mushrooms to the empty casserole and fry for 5min or until golden and just beginning to soften. Stir in the garlic, Worcestershire sauce and tomato puree and cook for 30sec.
- Return the sausages to the pan, then pour in the stock. Bring to the boil, then simmer over a medium heat, stirring occasionally, for 20min, or until the liquid is thick and reduced.
