Sausage and beans has to be every kid’s favourite meal. This healthier sausage and bean casserole recipe includes baby spinach, red peppers and cherry tomatoes, and is best served with crusty bread for a fuss-free weeknight supper.

454g reduced-fat sausages
1 tsp olive oil
1 red onion, cut into wedges
2 red peppers, seeds removed and sliced
2 x 400g reduced sugar and salt baked beans
100g baby leaf spinach
270g cherry tomatoes
14g parsley

Steps:

  • Preheat the oven to 200°C/fan 180°C/gas mark 6. Place the sausages in a deep, large oven tray and drizzle with the oil. Roast for 15 minutes.

    Remove the tray from the oven and add the onion and peppers. Roast for a further 10 minutes, then stir through the baked beans and spinach and top with the tomatoes. Season with black pepper and bake for a further 15 minutes until cooked. Garnish with the parsley and serve with crusty bread.

This sausage and baked bean casserole is quick to put together. Use tinned baked beans for an easy midweek meal for colder months.

Number Of Ingredients 10

1 tbsp. vegetable oil
6 Toulouse style pork sausages
1 onion, chopped
300g mushrooms, thickly sliced
2 garlic cloves, crushed
2 tbsp. worcestershire sauce
1 tbsp. tomato puree
250 mL chicken stock
2 x 415 g tin baked beans
Small handful of fresh parsley leaves, chopped

Steps:

  • Heat the oil over a high heat in a large casserole dish and add the sausages. Brown all over, then lift out on to a plate.
  • Add the onion and mushrooms to the empty casserole and fry for 5min or until golden and just beginning to soften. Stir in the garlic, Worcestershire sauce and tomato puree and cook for 30sec.
  • Return the sausages to the pan, then pour in the stock. Bring to the boil, then simmer over a medium heat, stirring occasionally, for 20min, or until the liquid is thick and reduced.
