A lean version of a German beef and cabbage filled roll. They freeze very well, and are good dipped in mustard.

1 pound lean ground beef
1 onion, chopped
½ medium head cabbage, shredded
½ (1 ounce) package dry onion soup mix
1 (8 ounce) package mild Cheddar cheese, sliced
black pepper to taste
2 (1 pound) loaves frozen bread dough, thawed
butter flavored cooking spray
¼ cup margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain fat. Stir in cabbage and onion soup mix; cook 5 minutes longer, or until lightly browned. Set aside.
  • Roll one loaf of bread dough into a 16x8 inch rectangle, then cut into eight 4 inch squares. Spoon cabbage mixture into center of each square, top with 1 small slice cheese and bring up diagonal points, pinching edges closed. Place krautburgers on a cookie sheet coated with cooking spray, and let rise for about 10 minutes.
  • Bake for 20 minutes, or until brown. Brush tops of warm rolls with margarine. Repeat process with second loaf of bread and remaining cabbage mixture and cheese.

Try a fresh take on the standard burger -- use ground turkey with sauerkraut and cheese. A great side dish would be a German potato salad, or a pasta salad made with German spätzle.

1 pound lean ground turkey (7% fat)
1-1/2 cups coarsely shredded German Emmentaler cheese (divided, 6 ounces)
1 cup German sauerkraut with wine (squeezed dry)
1/4 cup plain breadcrumbs
1 egg white
2 tablespoons medium-hot German mustard (plus extra for spreading on buns)
1/2 teaspoon caraway seeds (optional)
1/4 teaspoon Salt
1/4 teaspoon freshly ground pepper
4 pretzel rolls or other sandwich rolls (split horizontally and toasted)
pickles
red onion rings
sliced tomatoes
lettuce leaves

Steps:

  • Combine turkey, 1 cup German Emmentaler, sauerkraut, breadcrumbs, egg white, mustard, caraway if desired, salt, and pepper in a large bowl and mix together with your hands. Shape into four 4-inch diameter patties.
  • Heat a large nonstick skillet over medium heat until hot. Place burgers in skillet and cook, turning once, 4 to 5 minutes on each side or until cooked through. Sprinkle burgers evenly with the remaining 1/2 cup of Emmentaler during the last 2 minutes of cooking.
  • Spread rolls with additional mustard, place burgers on buns, and top with desired accompaniments.

Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. , Place in a greased bowl, turning once to grease top. Reduce heat to 350°; bake 15-20 minutes longer or until golden brown. Remove from pans to wire racks. Brush with melted butter. Serve warm. Refrigerate leftovers.
