Pork Roast with Sauerkraut - Can't Stay Out of the Kitchen image

Delicious old-world recipe for pork roast with potatoes and sauerkraut. It's terrific for holidays like Easter, company dinners or special occasions. This easy recipe includes only a handful of ingredients and is gluten free including a recipe for gluten free gravy.

Number Of Ingredients 12

4-5 lb. lean pork roast (butt)
2 16-oz. cans sauerkraut
6 large potatoes (peeled and halved)
all purpose flour or gluten free flour
2-3 tbsp. canola oil
Salt and pepper (to taste)
Leftover liquid in bottom of roaster
Flour mixed with water to thin paste (or use gluten free flour)
Salt & pepper (to taste)
2 dashes or shakes garlic powder
3-4 drops Kitchen Bouquet liquid seasoning
1-2 cups hot water (as needed)

Steps:

  • Salt and pepper roast, dredge in flour and brown in large roasting pan in a few tablespoonfuls of oil.
  • Sprinkle with salt and pepper again and place in roaster pan with a rack.
  • Add a cup or two of water.
  • Cover and cook in oven 2-3 hours at 350°. (Depending on how large the cut of meat).
  • Drain off fat and save drippings for gravy.
  • Wash and rinse sauerkraut and place in roaster with potatoes.
  • Add an additional cup of water.
  • Cover and cook an additional hour or so until potatoes are fork-tender.
  • Make gravy with any leftover drippings.
  • Whisk flour mixture into drippings in bottom of pan.
  • Season with salt, pepper and garlic powder, to taste.
  • Add a few drops of Kitchen Bouquet.
  • Add about 1-2 cups of hot water or as needed to make gravy.
  • Allow to boil and thicken.
  • This may take about 5-10 minutes.

Number Of Ingredients 9

1 package (32 oz) refrigerated sauerkraut, drained
2 medium apples, peeled, sliced
1 teaspoon caraway seed
1/4 cup apple juice or water
1 boneless pork roast (2 1/2 to 3 lb), string removed, trimmed of fat
6 small red potatoes (about 18 oz), cut in half
1 tablespoon Dijon mustard
3 tablespoons Dijon mustard
2 tablespoons packed brown sugar

Steps:

  • In 5- to 6-quart slow cooker, lightly mix sauerkraut, apples, caraway seed and apple juice. With spoon, make indention in center of mixture; place pork roast in center.
  • Arrange potato halves around roast on sauerkraut mixture. Spread 1 tablespoon mustard over roast.
  • Cover; cook on Low setting 7 to 8 hours.
  • In small bowl, mix sauce ingredients. Remove roast from slow cooker; place on serving platter. Cut roast into slices. Arrange potatoes around slices. With slotted spoon, remove sauerkraut mixture from slow cooker; place in serving bowl. Serve roast slices and potatoes with sauerkraut mixture and mustard sauce.
