What’s the best way to cook red cabbage? Like this! Every Christmas dinner plate needs this side. Our easy peasy recipe, with apple and raisins, is made by adding all the ingredients to a casserole dish then cooking in the oven for 30 minutes.

Number Of Ingredients 9

2 tbsp butter, plus a little extra to garnish (optional)
1 medium red onion, chopped
1 cooking apple, peeled, cored and very roughly diced
1 small to medium red cabbage, up to 1kg, thinly sliced
3 tbsp cider vinegar
1 tbsp brown sugar
1 tsp salt
3 cloves
Handful dried fruit such as raisins, or even apricots

Steps:

  • Preheat the oven to 150°C/fan130°C/gas 2. Melt the butter in a casserole or large baking tray and fry the onion until tender, without letting it brown.
  • Add the other ingredients, stir well and add 100ml of water. Cover with foil or a lid and cook in the oven for 30 minutes – check it after 15 minutes – until the cabbage is soft, sweet and sour. Check the seasoning. You may wish to serve it garnished with extra butter.

Makes 4 very large puds. You will need a Yorkshire pudding tin; mine is a 4 hole tin and each hole is about (7.5cm) 3 inches round.

Number Of Ingredients 6

100g self raising flour
2 eggs
100ml milk
¼ teaspoon salt
¼ teaspoon black pepper
vegetable oil - beef dripping would be better

Steps:

  • Sift the flour, salt and pepper into a bowl. *If you're using Homepride flour, here in the UK, it's pre-sieved so you can leave the sifting out.
  • Whisk in the eggs and add the milk, when it's all whisked nicely pour it into a jug - just because it's easier to pour into the Yorkshire pud tin.
  • Put 1 tablespoon of oil into 4 of the holes and heat it up in your preheated oven for a couple of minutes until the oil is very hot.
  • Pour the batter into the four holes of the pudding tin and pop it straight into the oven - middle shelf as they will RISE because of the self raising flour and touch the top of your oven!
  • Without opening the oven door leave them to cook for about 20 minutes when they should be nice and huge!
  • Serve immediately.
