Yield 16 skewers (3/4 cup sauce).

Number Of Ingredients 12

1 pound boneless skinless chicken breasts
1/2 cup lime juice
1 tablespoon balsamic vinegar
2 teaspoons minced chipotle pepper in adobo sauce
1/2 teaspoon salt
SAUCE:
1 medium ripe avocado, peeled and pitted
1/2 cup fat-free sour cream
2 tablespoons minced fresh cilantro
2 teaspoons lime juice
1 teaspoon grated lime zest
1/4 teaspoon salt

Steps:

  • Flatten chicken to 1/4-in. thickness; cut lengthwise into sixteen 1-in.-wide strips. In a large bowl, combine the lime juice, vinegar, chipotle pepper and salt; add the chicken and turn to coat. Cover and refrigerate for 30 minutes. , Meanwhile, for the sauce, place remaining ingredients in a food processor; cover and process until blended. Transfer to a serving bowl; cover and refrigerate until serving., Drain chicken, discarding marinade. Thread meat onto 4 metal or soaked wooden skewers. On a lightly oiled rack, grill skewers, covered, over medium heat (or broil 4 in. from the heat) for 8-12 minutes or until no longer pink, turning frequently. Serve with sauce.

Ginger Soy Chicken Skewers with Fire House Sauce image

This recipe consists of two parts, marinated and fried chicken, and a fiery dipping sauce. Most of the ingredients are probably already in your pantry, so you can whip up this dish in no time and enjoy it as a starter or snack to celebrate this hot & spicy day.

Number Of Ingredients 17

500 grams Boneless Chicken Breast.
1 inch fresh root ginger grated
2 cloves garlic crushed/ smashed
5 tsp dark soy sauce
1 tbsp tabasco
2 tsp honey
½ tsp salt
½ tsp cracked black pepper
3-4 whole pieces of Star Anise
4 tsp refined oil
1 tbsp cornflour
6 ½ tbsp mayonaisse
2 tsp tabasco sauce
¼ tsp red chilli powder
2 tsp chives/spring onions
6 tsp sweet chilli sauce
¼ tsp cracked black pepper

Steps:

  • To begin with, soak your wooden skewers in water overnight, this prevents the skewers from burning. If you plan to use metal skewers, you can skip this step.
  • For your marinade, combine all the ingredients listed above (Chicken Skewer Ingredients) in a bowl.
  • Cut your chicken breasts into thick, finger-length strips. Once cut, add your chicken to the marinade and refrigerate overnight.
  • The next morning, skewer your chicken strips. To skewer your chicken correctly, poke the skewer down through one corner, and then up and out from the other side. You can repeat this process until the entire piece is firmly on the skewer.
  • Heat 2 tablespoons of oil in a non-stick pan on the stove and cook on each side for 5 minutes on a low flame.
  • Et voilà! You’re done with step one.
  • For step two, combine all the ingredients for the dipping sauce in a bowl and give it a good mix. Now you’re all set to enjoy a deliciously spicy and mouth-watering treat.
