After trying a few recipes I developed my own version. I think it's the best!

Number Of Ingredients 8

5 cups coarsely chopped mixed fruit (apples, plums, and pears)
1 cup water
¾ cup apple juice
1 teaspoon soy sauce
1 tablespoon apricot preserves
½ cup packed light brown sugar
½ teaspoon garlic powder
½ teaspoon dry mustard

Steps:

  • Place fruit in a stock pot over medium high heat. Add water, apple juice, soy sauce, apricot preserves, brown sugar, garlic powder, and dry mustard. Bring to a simmer, stirring frequently to dissolve brown sugar. Reduce heat, and continue simmering for 40 minutes, or until fruit is completely soft. Remove from heat and allow to cool.n
  • Blend sauce in a food processor or blender until completely smooth, adjusting consistency with additional water, if desired. Cover, and refrigerate until ready to use.n

Roast Duck Breast Recipe with Red Wine Sauce - Sainsbury's image

This roasted duck breast recipe is a rich and indulgent meal for two – the red wine sauce intensifies the succulent duck breast and takes this incredible dish to the next level.

Number Of Ingredients 10

Jersey royal potatoes
olive oil
fresh rosemary, leaves picked and chopped
1 lemon, zested
ground cumin
cloves garlic, crushed
duck breasts, scored
red wine
redcurrant jelly
fine green beans

Steps:

  • Preheat the oven to 200ºC/gas mark 6. Toss the potatoes in a roasting tin with 1 tbsp oil, 1 sprig of rosemary and the lemon zest. Roast for 20 minutes. Meanwhile, mix the remaining rosemary and oil together with the cumin and garlic to make a marinade.

    Heat a frying pan over a high heat. Add the duck, skin side down. Reduce the heat and fry for 6-8 minutes until crisp. Turn and cook for 5 minutes. Brush with the marinade, then remove and transfer to the tray in the oven. Roast with the potatoes for 10 minutes.

    Meanwhile, pour the wine into the pan used to cook the duck and mix in the jelly. Simmer for 5 minutes. Cook the beans in a pan of boiling water for 3 minutes. Drain. 

    Slice the duck and serve drizzled with the red wine sauce and the veg on the side.

The duck skin was too salty - 2 teaspoons tuned out waaay too salty for us- we ended up cutting off the skin.
