600 grams Noodles (raw)
100 g Lean meat
2 pcs egg
3 flowers Shiitake Mushrooms
2 pcs rape
2200 g water
1 stage shallot
2 tablets ginger
1 scoop Xinhe Soy Sauce
1 scoop Xinhe Garlic Noodle Sauce
1 scoop Soy sauce
2 scoops oil

Steps:

  • Shred the refined meat, wash and slice the mushrooms and rapeseed, shred the green onion and ginger for later use, prepare a spoonful of soybean paste and garlic paste.
  • Pour the beaten eggs in the oil pan after heating, stir-fry and serve.
  • Put oil in the pot, heat up, add the green onion and ginger and stir fry for a nice aroma.
  • Pour in shredded pork and fry until the meat turns color.
  • Add shiitake mushroom slices and stir fry.
  • Add a spoonful of soybean paste and a spoonful of garlic noodle paste and stir fry.
  • Add a little water and simmer for 5 minutes.
  • Pour in the cut rapeseed and stir fry until the rapeseed is broken.
  • Add 2200ML of water to another pot, boil, add fresh noodles and cook.
  • Pour the cooked noodles and fried eggs into a vegetable pot and stir fry for a while, then pour a spoonful of soy sauce to taste.

100 g dried egg noodles ( , thinner ones are better)
1 cup bean sprouts remove the roots ( , cut into sections)
6 blanched chives ( , cut into sections)
3 green onions ( , shredded)
1/4 white onion
3 tbsp. cooking oil (, divided )
pinch of salt ( , if necessary )
1 tbsp. light soy sauce
1 tsp. dark soy sauce
1 tsp. Chinese cooking wine
1 tsp. water
1/4 tsp. sugar
1/4 tsp. ground white pepper

Steps:

  • Bring a large pot of water to a boiling and cook the noodles for 1 minute. During the process, separate the noodles. Transfer the noodles out and drain.
  • In a small bowl, mix all the ingredients of the sauce and set aside.
  • Add around 2 tablespoon of oil in wok and slow down the fire, fry until the noodles becomes dry and crispy. However this is only optional if you want a real Cantonese flavor. You can skip this to make a regular chow mein recipe. Transfer the noodles out.
  • Turn up the fire and add another tablespoon of oil, add onion and the white sections of green onions in.
  • Place noodles back, add blanched chive, spring onions and drizzle the sauce. Mix well. Sprinkle some salt if necessary. Serve immediately.

Add dark green parts of green onion, carrot ribbons, and bean sprouts and cook for 1 minute more or until  just softened.Remove from heat and divide among bowls; serve immediately.
