SARDINE PIZZA RECIPE | EAT SMARTER USA

1 teaspoon Dried yeast
1.333 cups flour
0.5 teaspoon salt
1 tablespoon olive oil
1 tablespoon olive oil
2 shallots (finely chopped)
1 garlic (finely chopped)
1 tablespoon tomato puree
3 cups tomatoes (peeled and diced)
1 pinch sugar
1 dash white wine vinegar
3 tablespoons fresh oregano (2 tbsp finely chopped)
1 cup yellow peppers (diced)
1 cup red peppers (diced)
4 Jalapeño (sliced)
5 canned Sardine (in oil)
1 slice tomatoes (to garnish)

Steps:

  • Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.
  • Mix the yeast with 2 tbsp lukewarm water. Mix together the flour and salt and create a well in the middle. Pour the yeast into the well and sprinkle with a little of the flour. Cover at leave to rise for 15 minutes.
  • Then add 80-100 ml lukewarm water and knead to form and smooth dough. Cover with a towel and leave to rise in a warm place for an hour until the dough has doubled in size.
  • Heat the oil in a small pot and fry the shallots and the garlic. Add the tomato puree and stir well. Then add the tomatoes and simmer for 10 minutes.
  • Season the sauce with a pinch of sugar, vinegar, salt, ground black pepper and the chopped oregano.
  • Re-knead the dough adding the olive oil.
  • Roll out the dough on a floured work surface into a round pizza about 20-25 cm Ø and place on the baking tray.
  • Spread the sauce on top of the dough leaving a crust around the edge. Place the peppers and jalapeños on top and then add the sardines and garnish with a slice of tomato.
  • Bake for 20-25 minutes and serve sprinkled with the remaining oregano.

1 cube fresh Yeast (42 grams)
500 grams Pastry flour
1 teaspoon salt
olive oil
20 Sardine (kitchen ready inserted, without heads and bones, in brine)
4 size onions
2 green chile peppers
2 garlic
Pastry flour (for the work surface)
12 tablespoons diced tomatoes (Pizza tomatoes)
freshly ground peppers
150 grams freshly grated Parmesan

Steps:

  • For the dough: Crumble the yeast into 250 ml (approximately 1 cup) of lukewarm water. Place the flour and salt in the bowl of an electric mixer fitted with the dough hook, make a well in the center and crumble in the yeast. Add 3 tablespoons olive oil and knead until the mixture forms a smooth dough that pulls away from the sides of the bowl. If the dough is too wet, add some flour, if it's too  dry, add a little lukewarm water.
  • Knead the dough on a floured surface until smooth and elastic, about 10 minutes. Cover and let stand in a  warm place until doubled in bulk, about 1 hour.
  • Preheat the oven to 220°C (approximately 425°F). Line a baking sheet with parchment paper.
  • Rinse the sardines, pat dry and slit them open.
  • Peel the onions, halve and cut into thin slices. Rinse the chilies and cut into thin rings.
  • Peel and finely chop the garlic.
  • Knead the dough again and divide into 4 equal pieces. Thinly roll each piece and place on the baking sheet.
  • Top each pizza with tomatoes and season with salt and pepper. Place the onion, chilies, sardines and garlic on top. Sprinkle with grated cheese and bake until the underside of the pizzas are crisp, about 20 minutes.
  • Remove and serve immediately.
