- Preheat a skillet over medium heat. Lightly brush one side of each slice of bread with the olive oil. Place 1 slice of bread, olive oil side down into the skillet, and arrange the apple slices evenly over the top. Sprinkle the Swiss cheese over the apple, then top with the remaining slice of bread, olive oil-side up. Cook until the bread is golden brown, then flip the sandwich over, and cook until the other side is golden brown and the cheese has melted, 1 to 2 more minutes.

GRILLED SWISS CHEESE AND TOMATO SANDWICHES – CAN'T STAY ...
Grilled Swiss Cheese and Tomato Sandwiches are utterly irresistible. This has been our favorite way to make Grilled Cheese Sandwiches for decades. These use Swiss cheese instead of cheddar cheese for a wonderful, savory flavor. Great for tailgating parties or for a quick lunch or dinner menu. Add Tomato Soup and you have a comfort food meal that will knock your socks off.

- Cook the bacon in a heavy skillet over moderate heat until crisp and browned, about 10 minutes. Transfer the bacon to a paper towel–lined plate to cool. Pour off all but 2 tablespoons of the bacon fat in the skillet. Add the mushrooms, shallot and thyme to the skillet and cook, stirring occasionally, until browned and tender, about 10 minutes. Add the vinegar and cook for another minute. Transfer the mushroom mixture to a bowl and wipe out the skillet. Butter 1 side of each slice of bread. Arrange 4 slices of the bread in the skillet, buttered side down. Top evenly with the cheese, bacon and mushrooms and the remaining slices of bread, buttered side up. Cook over moderate heat until the bottoms are golden brown. Flip and continue to cook until the cheese is melted and the bread is golden brown. Serve at once.
