Assembling pork sausages is a snap and, as always, if you use best-quality ingredients, it's hard to beat homemade.From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

Yield Makes 8 small patties

Number Of Ingredients 10

1 pound ground pork
1 garlic clove, minced
1 tablespoon dried sage, crumbled
3/4 teaspoon dried thyme
1/2 teaspoon dried fennel, crushed
Pinch of ground nutmeg
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper
1 large egg white
2 teaspoons vegetable oil

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.

This is a great fall off the diet sandwich...I have done so good as of late, so I decided I'd make something to satisfy my cravings, and reward myself, and yum!...did I ever!!...this sandwich was delicious! Ooey Gooey fresh mozzarella, lots of mushrooms, garlic and onions sauteed in wine, topping a nice juicy hot sausage patty... I could only eat half, but could have eaten the whole thing...it was so good...great comfort sandwich... Enjoy!

Number Of Ingredients 14

1/2 pound(s) hot sausage, or can use burger or mild sausage - i used tennesee pride hot breakfast sausage
1/4 teaspoon(s) thyme, dried
1/4 teaspoon(s) dried basil
salt - & pepper to taste
olive - oil - enough to sautee veggies
1 clove(s) garlic
4 - 5 ounce(s) fresh sliced mushrooms
1 medium onion, sliced thin - reserving 2 tablespoons chopped for sausage
2 teaspoon(s) worcestershire sauce
1/8 cup(s) sherry or other wine
4 slice(s) sour dough bread
4 - 6 slice(s) fresh mozzarella cheese, or your favorite melting cheese
4 tablespoon(s) butter
mustard - , mayonnaise or favorite sandwich condiment.

Steps:

  • In a medium sized bowl, add sausage and season with salt, pepper, thyme and basil. Stir to combine, add a few tablespoons chopped onion. Divide meat in half. Pat into 2 oval shaped patties.
  • In a medium sized heavy skillet ( I used my cast iron skillet.) Over medium - high heat, fry sausage 4 - 5 minutes per side or until no longer pink and browning well. Drain sausage on paper towels. Set aside.
  • In the same skillet add about 2 tablespoons olive oil and saute the onions, mushrooms, worcestershire sauce and garlic, until onions are translucent and mushrooms are browning. Salt and pepper as well.
  • Once veggies are cooked, add sherry and 1 teaspoon flour. Stir until well blended and sauce begins to thicken some. Set aside.
  • Place about 1 tablespoon butter in another skillet over medium to medium high heat. Swirl butter to coat bottom of skillet and add one slice of bread. Place sausage patty on top, then 1/2 the onion and mushroom mixture. Add a couple slices of mozzarella and continue cooking until bread is golden brown ( about 2 minutes ) Carefully , move sandwich enough to add another Tablespoon of butter and place top slice of bread on top of the mozzarella cheese.
  • Carefully flip the sandwich over to brown the other side. Remain cooking until other side is crispy and brown and cheese is thoroughly melted.
  • Cut sandwich in half and add your favorite condiments. I used mayonnaise and mustard. Repeat steps for other sandwich. Enjoy this yummy sandwich.
