Chocolate Sandwich Cookies I Recipe | Allrecipes image

Excellent frozen. I have played with this over the years, and come up with several variations. At the holidays, I have added 1 teaspoon peppermint extract to the filling in lieu of the vanilla, and have also used crushed peppermint candy in the filling. I have also dipped them in chocolate, and coated them in confectioners' sugar.

3 cups all-purpose flour
1?½ cups white sugar
¾ cup unsweetened cocoa powder
¾ teaspoon salt
3 teaspoons baking powder
1?½ cups milk
2 eggs
1?½ teaspoons vanilla extract
¾ cup shortening
¾ cup butter, softened
2 cups confectioners' sugar
? teaspoon salt
1 (7 ounce) jar marshmallow creme
1?½ teaspoons vanilla extract
1 tablespoon milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large bowl, combine flour, white sugar, cocoa powder, 3/4 teaspoon salt, and baking powder. Stir in 1 1/2 cups milk, eggs, 1 1/2 teaspoons vanilla, and shortening. Mix until smooth using an electric mixer. Drop batter by rounded teaspoons onto ungreased cookie sheets. Leave space, and only use a teaspoon; these spread.
  • Bake in preheated oven for 7 to 8 minutes. Remove from pan immediately, and cool on wire rack.
  • To make the filling, combine the butter, confectioners' sugar, 1/8 teaspoon salt, marshmallow creme, 1 1/2 teaspoons vanilla, and 1 tablespoon milk in a medium bowl. Beat with mixer until fluffy. Spread filling on one cookie, and top with another sandwich style.

2 packages devil's food cake mix (regular size)
1 cup canola oil
4 large eggs, room temperature
FILLING:
8 ounces cream cheese, softened
1/4 cup butter, softened
2-1/2 cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the cake mixes, oil and eggs until well blended. Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Do not flatten. , Bake at 350° until set, 8-10 minutes. Cool for 5 minutes before removing to wire racks (cookies will flatten as they cool). , In a small bowl, beat cream cheese and butter until fluffy. Beat in sugar and vanilla until smooth. Spread or pipe filling on the bottoms of half of the cookies; top with remaining cookies. Store in the refrigerator.

Add the egg yolk and vanilla; mix to combine. 2. In a medium bowl, whisk the flour, cocoa powder, baking soda and salt together to combine. Transfer to the bowl of the mixer and mix until the dough comes together. Form into a 1-inch-thick disk and wrap tightly in plastic wrap. Refrigerate for 20 to 30 minutes. 3. Roll out the dough between two sheets of parchment paper until the dough is ? inch thick. Use a 1-inch round cookie cutter to cut the dough into tiny circles, then transfer the circles to a parchment-lined baking sheet. (You can place the cookies close together; they won't spread much.) 4. Repeat until all the dough is used, rerolling the dough several times if needed. Press the tips of a fork into the center of each cookie to keep them from puffing up too much while baking. 5. Preheat the oven to 350?F. Bake the cookies until they appear set, 6 to 9 minutes. Cool completely. Turn half of the cookies over so the fork marks are facing down. 6. Make the Filling: In the bowl of an electric mixer, cream the butter, cream cheese and confectioners' sugar until light and fluffy, 4 to 5 minutes. Add the vanilla and heavy cream; mix until well combined. Transfer to a pastry bag or a large zip-top plastic bag. Cut a ?-inch opening in the corner of the bag. 7. Pipe the frosting into a mound in the center of each turned-over cookie. Top with another cookie and press gently. Let the cookies sit for 10 to 15 minutes to allow the frosting to set before serving.
