"This is a fascinating butter cookie with a hint of the Swedish spice cardamom. It looks like an upside-down tart that's waiting to be filled, but it's not. These are made with Sandbakkel molds in Sweden, however, little tartlet pans work well."

1 cup Butter
1/2 cup Granulated sugar
1 Egg
1 teaspoon Vanilla extract
1/4 teaspoon Ground Cardamon
2 cups All purpose flour

Steps:

  • "Cream butter and sugar until light and fluffy. Add egg vanilla, cardamom, and salt. Gradually add in flour. If mixture seems dry add a few drops of water. Gather dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes. Preheat oven to 375F. Lightly grease tins. Press about 2 teaspoons of dough into each tin; press along bottom and up the sides. Place tins on a cookie sheet. Bake 6-8 minutes for the little tins, 12-15 minutes for the larger tins. Cookies should be lightly browned. Let cool 5 minutes, then unmould cookies and place on wire racks to cool completely. Serve with the open end facing down."

1 cup Land O Lakes® Butter softened
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 large Land O Lakes® Egg
1 teaspoon almond or brandy flavoring
2 1/2 cups all-purpose flour

Steps:

  • Heat oven to 350°F.
  • Combine all ingredients except flour in bowl. Beat at medium speed, scraping bowl often, until well mixed. Add flour; beat at low speed until well mixed. If dough is too soft, cover; refrigerate at least 2 hours until firm.
  • Press 2 to 3 teaspoons dough evenly into each 3-inch sandbakkel mold. Place molds onto cookie sheets. Bake 8-11 minutes or until lightly browned. Cool 3 minutes.
  • Remove cookies from molds by tapping on table or loosening with knife. Cookies can be served plain or filled with fresh fruit, fruit filling, pudding or whipped cream.

  • In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add egg and extracts. Blend in flour. Cover and chill for 1-2 hours or overnight.
    Preheat oven to 375°. Using ungreased sandbakkelse molds, press 1 tablespoon dough into each mold. Bake cookies in molds until they appear set and just begin to brown around the edges, 10-12 minutes.
    Cool cookies for 2-3 minutes in molds. When cool to the touch, remove from molds. To remove more easily, gently tap with a knife and carefully squeeze the sides of the mold.

This is considered a buttery cookie but looks like a miniature tart base. Sometimes it is eaten just plain without anything in it. Sometimes it is filled just before eaten with whipped cream and fruit or jam. It is normally pressed into tiny fluted tins. Tiny muffin tins would probably work just as well. My DBIL was born in Norway. He loves many of their heritage foods. This is one of them which my sister makes every year at Christmas time for him. I think if I remember correctly the name means 'Sand Tarts'. Posted for ZWT 2010. Preparation time does not include refrigeration time.

SANDBAKKELS | JUST A PINCH RECIPES
Small sandbakkel molds are used to make these Scandinavian cookies. I got mine online. The first time using the molds you will need to spray them with nonstick spray. After that you should be fine, the molds are not normally washed. You can just wipe them lightly with a papertowel after use. My grandmother made these year round although they are a Christmas tradition.
