2 tablespoons Olive oil
5 cloves Garlic Minced
1 1/2 pounds Beef round Cubed 1 1/2 inch pieces
1/3 cup Yellow onion Minced
1/3 cup Celery Chopped
1/3 cup Green pepper Minced
1 Aji pepper Minced
5 sprigs Cilantro Chopped
1 teaspoon Salt & pepper
4 quarts Beef stock
1 Green banana 1/2 inch thick cuts
1 Yellow plantain 1/2 inch thick cuts
1 Sweet potato 1/2 inch cubes
3 medium Potatoes 1/2 inch cubes
2 Corn on the cob 1 1/2 inch chunks
1/4 cup Tomato sauce
1 package Sazon Goya with Culantro and Achote
1 Lemon juiced

Steps:

  • "In a preheated large pot over low-to-medium heat, combine olive oil, garlic, beef cubes, and onions, stir until beef is brown on all sides and onions begin to become translucent. Fold in chopped pepper, celery, aji, cilantro, salt, pepper,and 1 quart of beef stock. Cook down until stock is reduced by half. Stir beef, then fold in all the remaining vegetables, beef stock, and ingredients. Continue to cook until meat is tender and the vegetables soft. If you cook on low/medium heat cook for a few hours to develop the flavor. If you don't have the time you can do the same steps but cook on medium in a pressure cooker for about 30 minutes. "
