I remember the winter afternoon when my grandmother (Ruby Vaughan) found this recipe in the Omaha World-Herald newspaper when we lived in Chadron, NE about 1958. We had never heard of banana bread before but thought it sounded very good and so easy to make. She made this recipe soon after and it was just wonderful. It has a rich golden color, unlike so many other pale banana breads I have seen since. There were many winter evenings that she would make this wonderful bread and a pot of tea, and this would be our supper! My grandfather, Fred Vaughan worked for the railroad and worked nights..

Number Of Ingredients 8

1 cup(s) granulated sugar
1/2 teaspoon(s) salt
1/2 cup(s) butter or margarine (one stick)
3 - ripe bananas, very ripe is great
2 - eggs, beaten
1 teaspoon(s) baking soda
2 cup(s) all-purpose flour
1/2 cup(s) nuts - pecans or walnuts, chopped

Steps:

  • Cream sugar, salt, and butter (or margarine) with a beater.
  • Then add the 2 eggs and 3 mashed bananas to the above mixture and blend well.
  • In a separate bowl, add baking soda plus the flour. Sift and mix.
  • Add the dry ingredients to the creamed mixture (of sugar, salt, butter, and banana mixture). Mix all until just blended. Then add the chopped nuts.
  • Pour batter into a greased loaf pan. Bake at 325 degrees for about 1 hour or until brown. You can stick a toothpick into the center and if it comes out clean, it's done. Do not overbake. Start checking with a toothpick as soon as it starts looking a little brown which will be at one hour.
  • I like to drizzle a little powered sugar frosting over the top while it is still warm, or just spread a little butter over the top instead. I prefer, the drizzle of frosting; however. It is a wonderful bread and the best banana bread I have ever eaten. My grandmother clipped it out of the Omaha World Herald newspaper around 1958.

Rustle up homemade pitta bread to serve with dips or as a side dish to mop up juices. You can easily make them ahead and freeze them for a fail-safe snack

Number Of Ingredients 4

2 tsp fast-action dried yeast
500g strong white bread flour, plus extra for dusting
2 tsp salt
1 tbsp olive oil

Steps:

  • Mix the yeast with 300ml warm water in a large bowl. Leave to sit for 5 mins until the yeast is super bubbly then tip in the flour, salt and olive oil. Bring the mixture together into a soft dough. Don’t worry if it looks a little rough round the edges.
  • Tip the dough onto a lightly floured work surface. Knead for 5-10 mins until you have a soft, smooth and elastic dough. Try to knead using as little extra flour as possible, just enough so that the dough doesn’t stick – this will keep the pittas light and airy. Once kneaded, place in a lightly oiled bowl, cover with a tea towel and leave to double in size, approximately 1 hour.
  • Heat oven as high as it will go (ideally 250C/230C fan/gas 9) and put a large baking tray on the middle shelf of the oven to get searingly hot. Divide the dough into eight balls then flatten each into a disc with the palm of your hand. On a lightly floured surface, roll each disc into an oval, around 20cm long, 15cm wide and 3-5mm thick.
  • Carefully remove the hot tray from the oven. Dust with flour then place your pittas directly onto it – you may have to do this in batches. Return swiftly to the oven and bake for 4-5 mins, or until the pittas have puffed up and are a pale golden colour. Wrap each hot pitta in a clean tea towel once it's baked to keep it soft while the others cook.

    1. Preheat the oven to 180ºC/350ºF/gas 4.
    2. Lightly grease the bottom and sides of a 1-litre loaf tin with a little butter – I use a folded-up piece of kitchen paper to do this.
    3. In a large bowl, use a wooden spoon to beat the soft butter until creamy.
    4. Crack in the eggs and beat them with the butter. It might look a little lumpy but don’t worry, it will come back together later.
    5. Peel 3 of the bananas, then mash and smush them into the mix with a fork so you’ve got a mixture of smooth and chunky.
    6. Stir in the honey and the apple juice, then use a spatula to fold in the flour and cinnamon, taking care not to over mix.
    7. If using, chop the pecans on a chopping board using the cross-chop method (or you could bash them with a rolling pin), then fold them through the mixture.
    8. Spoon all the mixture into the loaf tin, then peel and slice the remaining banana and poke into the top. Bake for 40 to 50 minutes, or until golden and cooked through. To check if it’s done, stick a cocktail stick or skewer into the middle of the loaf, remove it after 5 seconds and if it comes out clean the loaf’s cooked; if it’s slightly sticky it needs a bit longer.
    9. Allow the loaf to cool slightly, then carefully turn out on to a wire rack to cool completely.
    10. Transfer to a nice plate, cut into slices, then serve. It’s delicious spread with butter, honey, your favourite jam or even chocolate spread. Have fun!

    1. Put the flour, yeast and 1 teaspoon of sea salt into a large bowl and make a well in the middle. Gradually pour in 550ml of tepid water, continuously stirring and bringing in the flour from the outside as you go to form a rough dough.
    2. Transfer to a flour-dusted surface and knead for 10 minutes, or until smooth and springy. Place in a bowl, cover with a damp tea towel and prove in a warm place for 1 hour, or until doubled in size.
    3. Meanwhile, make the butter – this is a big batch, to make good use of your time, and you can freeze the extra for rainy days. Use a garlic crusher to crush the garlic into the softened butter, finely grate over the zest of ½ a lemon, finely chop and add the parsley (stalks and all), the cayenne and a pinch of salt, then mix it all together.
    4. Remove one quarter to use in this recipe, then place the rest on a sheet of greaseproof paper, roll it up into a log and twist the ends like a Christmas cracker, then pop into the freezer.
    5. After 30 minutes, get the butter out and slice it up to pre-portion, then re-roll and return to the freezer, where it will keep very happily for up to 6 months.
    6. Spread one third of your soft butter portion all around the base and sides of a large metal tray (25cm x 35cm), then scatter in the breadcrumbs and shake around into an even layer so they stick to the butter.
    7. Divide up the dough into 35 pieces, then, one-by-one, roll each one into a ball and place in the tray in rows – 5 balls across and 7 balls long is perfect.
    8. Bomb over another third of the soft butter, in and around the balls. Leave to prove for another 1 hour 30 minutes, or until doubled in size again.
    9. Preheat the oven to 190ºC/375ºF/gas 5.
    10. Sprinkle the balls with a little salt, then bake on the bottom shelf of the oven for 30 minutes, or until lovely and golden.
    11. Bomb over that final third of your soft butter and spread it around to give the bread a beautiful shine.
    12. Whack the tray in the middle of the table or at the centre of your picnic for sharing, and let everyone tear off their own pieces.
