Spice-crusted stir-fried shrimp top a cool, crisp Asian-style slaw for an easy supper. Many traditional versions of this recipe use Sichuan peppercorns. We've opted to use Chinese five-spice powder, which contains Sichuan peppercorns and is more readily available. Make it a Meal: Serve with rice noodles or brown rice and a sprinkle of chopped cilantro.

¼ cup lime juice
4 teaspoons reduced-sodium soy sauce
4 teaspoons sesame oil
1 teaspoon sugar
6 cups cabbage, preferably napa, thinly sliced (about 1/2 head)
2 small red or orange bell peppers, very thinly sliced
1/4 cup rice flour, or cornstarch (see Ingredient note)
½ teaspoon kosher salt
1 teaspoon freshly ground pepper
1 teaspoon five-spice powder, (see Ingredient note)
1 1/3 pounds raw shrimp, (21-25 per pound), peeled and deveined
2 tablespoons canola oil
2 jalapeno peppers, seeded and minced

Steps:

  • Whisk lime juice, soy sauce, sesame oil and sugar in a large bowl until the sugar is dissolved. Add cabbage and bell peppers; toss to combine.
  • Combine rice flour, salt, pepper and five-spice powder in a medium bowl. Add shrimp and toss to coat in spice mixture. Heat oil in a large nonstick skillet over medium-high heat. Add the shrimp and cook, stirring often, until pink and curled, 3 to 4 minutes. Add jalapenos and cook until the shrimp are cooked through, about 1 minute more. Serve the slaw topped with the shrimp.

A good salt-and-pepper prawn is a thing of beauty: salty, crispy, spicy. Serve these crisp-fried prawns with nahm jim mayonnaise for dipping and they will be a huge finger-food hit at your next party or weekend meal.

1 tbsp Sichuan peppercorns
1 tbsp black peppercorns
1 tbsp sea salt
¼ cup plain flour
¼ cup rice flour
500g peeled and deveined prawns (shrimp)
vegetable oil for deep frying
lime wedges to serve
Nahm Jim Mayonnaise:
3 cloves garlic
3 small birds’ eye chilles
½ long red chilli
2 tbsp sugar
1½ tbsp fish sauce
juice of 1 limes
1 tbsp finely chopped coriander stalks and leaves
½ cup mayonnaise

Steps:

  • For the nahm jim mayonnaise, use a mortar and pestle to pound the garlic and chillies to a rough paste. Then, using the pestle, stir in the sugar, fish sauce and lime juice. Transfer to a mixing bowl and stir through the coriander and mayonnaise. Set aside in the fridge until ready to serve. ? Heat the peppercorns in a dry frying pan over medium-high heat until just smoking. Transfer to a mortar and use a pestle to grind to a fine powder. Stir in the salt. Heat enough oil in a wok or large heavy-based saucepan for deep frying. Check the oil is hot enough by dipping in a wooden spoon. When bubbles form around the spoon the oil is ready. ? Combine the plain and rice flours in a large bowl. Pat dry the prawns with paper towel. Then dredge in the flour and shake to remove any excess. Slide coated prawns into the oil and cook for about 3 minutes or until golden and cooked through. Drain on paper towel. While the prawns are warm, place them in a large bowl and toss with 1 tbsp of your salt and pepper mix. Serve with nahm jim mayonnaise.

While the pot of oil is heating up, dry roast the salt and pepper in a pan until the pepper becomes fragrant. Once the pepper has become fragrant, remove from the heat and add the sugar, mix and set aside. Coat a batch of the prawns in corn starch and shake off the excess before frying in the oil. Cook for about 1-2 mins before transferring to a plate with a paper towel to absorb the excess oil. Continue to cook the remaining prawns in batches until finished. In a wok, heat up 1 tbsp of oil and add the chilli, onions and garlic. Sauté until fragrant before adding the deep-fried prawns and the salt and pepper mix. Toss lightly until combined and then serve!
